  • 1 cup packed brown sugar
  • 1/2 cup honey
  • 1/2 cup unsalted butter
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  1. Preheat oven to 325 F.
  2. Remove ham from packaging and place in roasting pan with flat side down.
  3. Bake ham about 1 hour until heated through to internal temperature of 130 F with meat thermometer inserted into thickest part of ham.
  4. In medium saucepan, combine brown sugar, honey, butter, Dijon mustard, apple cider vinegar, cinnamon and cloves. Cook mixture over medium heat, stirring frequently, until butter is melted and ingredients are well combined.
  5. Brush about half of glaze over ham, making sure to fill crevices or scored cuts.
  6. Return ham to oven and bake 30-45 minutes, or until glaze is bubbly and caramelized with internal temperature of 145 F.
  7. Baste ham with pan juices and glaze every 10-15 minutes while baking.
  8. Remove from oven and let rest 10 minutes before slicing and serving.

Watermelon Bourbon Glaze with Grilled Flank Steak

Servings: 6

  • 1 1/2 cups watermelon juice (approximately 2 1/2 cups chopped watermelon, blended)
  • 2 tablespoon minced garlic
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 teaspoon hot sauce
  • 1/4-1/2 cup bourbon
  • 2 pounds flank steak or London broil
  • 1/4 teaspoon cornstarch
  1. In medium saucepan over medium-high heat, reduce watermelon juice to 2/3 cup. Toward end of reduction, add garlic. Remove from heat, cool 10 minutes then add soy sauce, brown sugar, hot sauce and bourbon. Mix well.
  2. Place watermelon-bourbon glaze in large zip-top bag. Add steak and massage to cover meat. Close bag and refrigerate 3-4 hours.
  3. Heat grill to high heat. Remove steak from plastic bag and gently shake to remove excess glaze.
  4. Grill steak 4-6 minutes; turn, grill 4-6 minutes, depending on thickness of steak. Remove from heat. Steak should be pink in center.
  5. Allow steak to rest on platter or cutting board 10 minutes.
  6. Mix small amount of watermelon-bourbon glaze with cornstarch. In small saucepan over medium-high heat, add cornstarch mixture to remaining glaze and simmer 3-5 minutes. Reduce to medium heat until mixture thickens. Remove from heat.
  7. Cut flank steak on bias into thin strips. Drizzle watermelon-bourbon glaze over top.

Watermelon Walnut Currant Chutney

Servings: 16

  • 4 cups watermelon, juiced
  • 2 cups watermelon rind (white part), diced small
  • 2 tablespoons apple cider vinegar
  • 1 1/2 cups packed brown sugar
  • 1/2 medium white onion, sliced
  • 1 tablespoon minced garlic
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves, ground
  • 1 teaspoon lemon zest
  • 1 lemon, juice only
  • 2 tablespoons currants
  • 2 tablespoons roasted walnuts
  • 1 wheel brie cheese, for serving
  • crackers, for serving
  1. In saucepan over medium heat, reduce watermelon juice to 2 cups. Combine with watermelon rind, apple cider vinegar, brown sugar, white onion, garlic, nutmeg, cloves, lemon zest, lemon juice, currants and walnuts; simmer until almost dry.
  2. Chill and serve over brie with crackers.

  • 2/3 cup white sugar

  1. To make vinegar slaw: In small saucepan over medium heat, heat apple cider vinegar, celery seeds, sugar and water; stir until sugar dissolves. In large bowl, pour mixture over cabbage; cover and refrigerate.
  2. To make cilantro lime crema: In blender, blend sour cream, cilantro, mayonnaise, lime juice, lime zest and garlic. Season with salt and pepper, to taste; refrigerate.
  3. To make lobster tacos: Preheat grill to medium-high heat.
  4. Brush grill grates with oil to prevent sticking. Using kitchen shears, cut lobster shells in half lengthwise. Place skewer through meat to prevent curling during cooking.
  5. Brush lobster meat with melted butter and season with salt and pepper.
  6. Grill lobster tails meat side down 5 minutes then flip.
  7. Brush meat again with butter and cook 5 minutes, or until opaque throughout. Cook to 140 F internal temperature.
  8. Remove meat from shells and cut into bite-sized chunks or leave whole, if desired.
  9. Place tortillas on grill 30-60 seconds per side, or until warmed and slightly brown.
  10. Add drained slaw to tortillas. Top with lobster meat, pico de gallo and cilantro sauce. Serve with lime wedges.

  • 4 single-serve cups Aunt Nellie's Diced Pickled Beets
  • 1 finely chopped scallion (about 2 tablespoons)
  • 1/2 cup shredded radishes
  • 1 cup plain Greek yogurt
  • 1/2 cup finely crumbled feta cheese
  • 2 tablespoons chopped flat-leaf parsley
  • 2 teaspoons chopped oregano
  • 1/4 teaspoon kosher salt, plus additional, to taste, divided
  • 1 pinch ground black pepper
  • 2 pounds salmon fillets, skinless
  • 3 tablespoons blackened seasoning
  • 2 tablespoons olive oil
  • 12 slider buns
  • 1 cup baby arugula
  1. Drain beets well. In medium bowl, combine diced beets, scallions and radishes. Set aside.
  2. In small bowl, combine yogurt, feta, parsley and oregano. Stir in 1/4 teaspoon kosher salt and black pepper. Set aside.
  3. Cut salmon into 12 roughly 2 1/2-inch squares, about 1/2-inch thick. Slice thick parts of fillets in half to make thinner, if needed.
  4. Sprinkle fillets with salt, to taste, on both sides. Sprinkle evenly with blackened seasoning until well coated.
  5. Heat nonstick skillet or cast-iron pan over medium heat and add oil. Add salmon, in batches if needed, and cook, turning once, until salmon is crisped and almost cooked through, about 1 1/2 minutes per side. Remove and let rest.
  6. Spread each slider bun with about 1 tablespoon yogurt sauce. Layer arugula, salmon and beet relish on each slider and serve.

Poached Salmon with Collard Green Salad

  • 1 1/4    cups Florida Orange Juice, divided   
  • Nonstick cooking spray
  • 1          pound salmon filets
  • 1          cup white wine
  • 2          cloves garlic, smashed
  • 2          teaspoons finely grated fresh ginger, divided
  • 2          tablespoons olive oil
  • 1          tablespoon apple cider vinegar
  • 1          tablespoon finely minced shallot
  • salt, to taste
  • pepper, to taste
  • 1          small bunch collard greens (about 8 ounces), stems and center ribs removed
  • 1/2       cup toasted, slivered almonds
  1. Preheat oven to 375 F. Spray small glass baking dish with nonstick cooking spray. Set salmon in dish.
  2. In small saucepan over high heat, combine 1 cup 100% orange juice, white wine, garlic and 1 teaspoon grated ginger; bring to simmer.
  3. Pour poaching liquid over salmon and cover with aluminum foil.
  4. Poach in oven 15-20 minutes, or until salmon is cooked through.
  5. In lidded jar, combine remaining 100% orange juice, remaining grated ginger, olive oil, vinegar and shallot; shake to combine. Season with salt and pepper, to taste.
  6. Cut collard greens into thin ribbons and transfer to large mixing bowl. Pour dressing over collard greens; toss well to combine and fully coat.
  7. Remove salmon from liquid and serve on top of collard greens. Sprinkle with almonds.
  8. Season with additional salt and pepper, to taste, and serve.

Orange Kale Smoothie

Servings: 2

  • 2          cups Florida Orange Juice
  • 1/4       cup frozen pineapple
  • 1          cup kale, tough stems removed
  • 4          mint leaves
  1. In large blender, blend 100% orange juice, frozen pineapple, kale and mint leaves until smooth.
  2. Pour into tall glass.

Green Chili Jack Smash Burgers

Burger Patties:

  • 1          pound ground pork
  • 4          tablespoons red onion, scrubbed with vegetable brush under running water and finely minced
  • 1          teaspoon garlic, minced
  • 1          teaspoon chipotle chili powder
  • 2          teaspoons ancho chili powder
  • 1          cup cooked black-eyed peas, drained
  • 1          teaspoon salt, plus additional, to taste
  • 4          slices Jack cheese

Caramelized Onions:

  • 2          tablespoons butter
  • 1          large onion, scrubbed with vegetable brush under running water and sliced thin
  • 1/2       cup water
  • 1/2       teaspoon salt

Charred Green Chili Mayo:

  • 1          can (3 ounces) diced green chilies
  • 2/3       cup mayonnaise
  • 1          clove garlic, crushed
  • 1          tablespoon lime juice
  • 2          green onions, gently rubbed under cold running water and finely sliced
  • 1/4       cup cilantro, gently rubbed under cold running water and chopped
  • 4          hamburger buns
  • 1          avocado, peeled and sliced
  • 1/2       head lettuce, gently rubbed under cold running water
  1. In large bowl, mix ground pork, onion, garlic and chili powders. Add black-eyed peas and salt; mix well. Form into four loosely packed balls and refrigerate at least 30 minutes.
  2. To make Caramelized Onions: In large skillet over medium-high heat, warm butter. Add onions, water and salt; cook, stirring, until onions soften and turn golden brown, about 5 minutes. Remove from heat and set aside.
  3. To make Charred Green Chili Mayo: Place green chilies in hot cast iron skillet over medium-high heat. Cook, turning, until chilies begin to soften and turn black. Remove from heat and place in small bowl. Add mayonnaise, garlic and lime juice; whisk to blend. Add green onions and cilantro; stir well and refrigerate.
  4. To make burgers: Warm cast iron or nonstick griddle pan over medium-high heat. Place pork balls on hot skillet; flatten with heavy metal spatula. Season with salt, to taste. Cook approximately 3 minutes; flip and cook 2-3 minutes until internal temperature reaches 145 F.
  5. Lightly toast buns. Place each burger on toasted bun with slice of cheese, Caramelized Onions, Charred Green Chili Mayo, avocado and lettuce.

Pork Chops with Smashed Yellow Peas and Black-Eyed Pea Gravy

  • 2          cups yellow split peas, cooked and drained
  • 1/4       cup, plus 2 tablespoons, softened butter, divided
  • 1/4       cup cream
  • 1/4       teaspoon salt, plus additional, to taste
  • 4          pork chops
  • pepper, to taste
  • 2          tablespoons olive oil
  • 1          onion, gently rubbed under cold running water and diced
  • 1          can black-eyed peas with juice
  • 1/8       cup flour
  • 1          cup milk
  1. In medium bowl, use fork or potato masher to mash peas. Stir in 1/4 cup butter, cream and 1/4 teaspoon salt.
  2. Season pork chops with additional salt and pepper, to taste.
  3. In large skillet, warm oil over medium heat. Add pork chops to pan and cook approximately 4 minutes per side, or until they reach internal temperature of 145 F. Remove pork chops from pan; keep warm.
  4. In same pan, add remaining butter, onion and black-eyed peas. Cook 2-3 minutes until warm throughout, scraping pan. Add flour and season with salt and pepper, to taste. While stirring, slowly add milk.
  5. Serve mashed peas topped with pork chops and black-eyed pea gravy.

Cuban Black Beans

Serving: 6

  • 1          quart water
  • 1          green bell pepper, scrubbed with vegetable brush under running water and diced, divided
  • 4          cloves garlic, peeled, divided
  • 1          cup dried black beans, rinsed and soaked overnight
  • 1          bay leaf
  • 2          tablespoons olive oil
  • 2          slices bacon, diced
  • 1/2       Spanish onion, scrubbed with vegetable brush under running water and diced
  • 1/2       teaspoon dried oregano
  • 1/4       teaspoon ground cumin
  • 1/2       teaspoon black pepper
  • 2          tablespoons apple cider vinegar
  • 1          tablespoon light brown sugar
  1. Fill large pot with water. Add 1/2 diced green pepper, two garlic cloves, beans and bay leaf. Bring to boil over high heat. Reduce heat, cover and simmer until beans are tender, about 1 hour.
  2. In skillet over medium-high heat, warm olive oil. Add bacon; cook, turning, until bacon starts to brown, about 2 minutes. Add remaining green pepper and onion; cook, stirring, until slightly softened, about 3 minutes.
  3. Chop remaining garlic cloves. Add to skillet with oregano, cumin and black pepper. Stir 1 minute. Pour in vinegar, scraping browned bits from bottom of pan with wooden spoon.
  4. When beans are cooked, discard bay leaf. Transfer 1 cup beans to blender; blend to make paste. Return blended beans to large pot. Add bacon mixture and sugar. Stir well; bring to boil over medium heat. Lower heat, simmer and cook, uncovered, 20 minutes, skimming foam from top.

Pot Roast Tacos with Chimichurri

Chimichurri:

  • 1 1/2    cups fresh Italian parsley
  • 1          cup fresh cilantro
  • 2          tablespoons green onion, chopped
  • 1          tablespoon garlic, chopped
  • 1/4       cup olive oil
  • 2          tablespoons fresh lemon juice
  • 1          tablespoon water
  • 1          teaspoon sea salt
  • 1          teaspoon crushed red pepper

Tacos:

  • 3          cups chuck roast, slow cooked and chopped
  • 8          yellow corn tortillas (6 inches)
  • 1          ripe avocado, pitted and sliced
  • 4          radishes, sliced
  • 1/4       cup queso fresco, crumbled
  1. To make chimichurri: In food processor, combine parsley, cilantro, onion and garlic until chopped. Add olive oil, lemon juice, water, salt and red pepper; process until fully combined.
  2. To assemble tacos: In medium skillet over medium-high heat, cook chopped chuck roast 5 minutes. Remove from heat and mix in 1/2 cup chimichurri. In grill pan, char tortillas then fill evenly with meat, avocado, radishes and queso fresco. Serve with remaining chimichurri.

Chili Loaded Baked Potato

  • 6          sweet potatoes (8 ounces each)
  • nonstick cooking spray
  • salt, to taste
  • pepper, to taste
  • 1          tablespoon olive oil
  • 2          pounds ground chuck
  • 2          yellow onions, diced
  • 2          tablespoons garlic, minced
  • 3          tablespoons chili powder
  • 2          tablespoons ground cumin
  • 1          tablespoon dried oregano
  • 2          teaspoons smoked paprika
  • 1/4       teaspoon cayenne pepper
  • 3          cups low-sodium beef broth
  • 1          can (28 ounces) crushed tomatoes
  • 1          tablespoon apple cider vinegar
  • 1          can (15 ounces) butter beans, drained and rinsed
  • 1/2       cup fresh cilantro, chopped
  • 1          Anaheim chile, minced
  • 1          teaspoon sea salt
  • 1/2       cup plain Greek yogurt
  • 1/4       cup fresh cilantro leaves
  • 1/4       cup red onion, minced
  1. Heat oven to 400° F. Line baking sheet or pan with parchment paper. Rinse and scrub sweet potatoes; pat dry with paper towel and pierce several times with fork or knife. Place in prepared pan. Lightly spray sweet potatoes with nonstick cooking spray and season with salt and pepper, to taste. Bake 45 minutes- 1 hour until tender when poked.
  2. In pot, heat olive oil. Saute chuck until fully cooked. Drain fat and return to pot; add onion, garlic, chili powder, cumin, oregano, paprika and cayenne pepper. Reduce heat to medium-low and saute until onions are soft, about 10 minutes, stirring often.
  3. Add broth, crushed tomatoes and vinegar to pot. Increase heat to high and bring to boil. Reduce to medium-low and simmer 10 minutes. Add butter beans, cilantro and chile; cook 5 minutes. Season with sea salt.
  4. Split potatoes lengthwise; fluff flesh with fork. Top evenly with chili, yogurt, cilantro leaves and red onion.

Nutritional information per serving: 573 calories; 10 g fat; 58 g carbohydrates; 588 mg sodium; 11 g fiber; 25 g protein; 12 g sugar.

Cheesy Ground Beef Skillet

  • 1 3/4    cups water
  • 1          teaspoon sea salt
  • 1          cup white rice
  • 1          tablespoon olive oil
  • 1          pound extra-lean ground beef
  • 1          yellow onion, chopped
  • 1          tablespoon garlic, chopped
  • 1          red bell pepper, seeded and chopped
  • 1          teaspoon dried oregano
  • 1          teaspoon dried basil
  • 1/2       teaspoon crushed red pepper
  • 1/2       teaspoon sea salt
  • 1/4       teaspoon ground black pepper
  • 1/2       cup tomato sauce
  • 1          can (15 ounces) kidney beans, rinsed and drained
  • 1          cup shredded cheddar cheese
  • 1/3       cup fresh parsley, minced
  1. In saucepan over high heat, bring water to boil. Add salt and rice; stir once then cover pot and reduce to low heat 18 minutes.
  2. In large skillet, heat olive oil. Stir in ground beef. Cook and stir until beef is crumbly and no longer pink. Drain and discard excess grease. Mix in onion and garlic; cook until tender, about 5 minutes. Add bell pepper, oregano, basil, red pepper, sea salt and black pepper; cook and stir until bell pepper is tender, about 5 minutes.
  3. Stir in cooked rice, tomato sauce and kidney beans. Reduce heat and cover until vegetables are tender, about 8 minutes. Remove pan from heat, sprinkle cheese over top and garnish with parsley.

Nutritional information per serving: 399 calories: 14 g fat; 36 g carbohydrates; 816 mg sodium; 4 g fiber; 30 g protein; 3 g sugar.
