Game Day Buffalo Chicken Dip
Servings: 3-4
- 2 cups shredded chicken
- 8 ounces cream cheese
- 1/2 cup sour cream
- 1 1/2 cups sharp cheddar cheese, plus additional for topping, divided
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 heavy pinch dried dill
- 1/2 cup hot sauce
- 2 green onions, chopped
- blue cheese crumbles
- chips
- vegetable sticks
- Heat oven to 400 F.
- In bowl, mix shredded chicken, cream cheese, sour cream, 1 1/2 cups shredded cheese, onion powder, garlic powder and dried dill until combined. Add hot sauce; mix until combined.
- Transfer mixture from bowl to oven-safe dish. Top with additional shredded cheese, to taste.
- Bake until cheese is melted, approximately 15 minutes.
- Top with blue cheese crumbles and chopped green onion.
- Serve warm with chips and vegetable sticks.

Tex-Mex Beef Lasagna

Servings: 10
- 1 tablespoon olive oil
- 1 onion, diced
- 2 pounds ground beef
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- 2 teaspoons chipotle powder
- 1/2 teaspoon onion powder
- 15 ounces canned corn, drained
- 15 ounces canned seasoned black beans, drained
- 10 ounces canned diced tomatoes with green chiles, drained
- 15 ounces canned red enchilada sauce
- 1 cup Mexican crema or sour cream
- nonstick cooking spray
- 12 corn tortillas
- 8 ounces shredded Mexican blend cheese
- cilantro (optional)
- green onions, thinly sliced (optional)
- Preheat oven to 375 F.
- In large pan or skillet, heat olive oil over medium-high heat then add onion. Cook until softened, 4-5 minutes, stirring regularly.
- Add ground beef and cook, stirring regularly, until beef has browned.
- Add kosher salt, garlic powder, cumin, chipotle powder and onion powder; stir well. Add corn, black beans and diced tomatoes. Turn heat to medium and simmer 10 minutes. Remove from heat.
- In bowl, combine enchilada sauce and crema; mix well.
- Spray casserole dish with nonstick cooking spray. Pour about 1/4 cup enchilada sauce mixture on bottom to prevent tortillas from sticking.
- Layer 2-4 tortillas across bottom then top with layer of ground beef mixture. Use ladle to spoon some enchilada sauce mixture on top, distributing evenly. Top with another layer of tortillas then repeat layers until casserole is full, 3-4 layers. Top with shredded cheese.
- Loosely cover dish with foil in tent shape to help prevent cheese from sticking then bake 30 minutes.
- Remove foil and bake 10-15 minutes until cheese is bubbly and golden brown.
- Cool 5 minutes before serving. Top with cilantro and green onions, if desired.

- 2 tablespoons olive oil
- 1/2 cup finely chopped yellow onion
- 8 ounces mushrooms, such as white button, crimini or portabella, finely chopped
- 1/2 pound lean ground beef
- 1 tablespoon taco seasoning
- 6 burrito-size flour tortillas (about 10 inches each)
- 1/3 cup nacho cheese sauce
- 6 tostada shells
- sour cream
- 6 mini soft taco-size flour tortillas (about 4 1/2 inches each)
- shredded lettuce
- diced tomatoes
- shredded Mexican cheese blend
- nonstick cooking spray
- In large skillet over medium-high heat, heat olive oil. Cook onions 1-2 minutes until translucent. Add mushrooms and ground beef. Cook about 5 minutes, or until beef is no longer pink. Stir in taco seasoning. Cook 2-3 minutes. Set aside.
- Lay one large flour tortilla on flat surface. Spread 2 tablespoons mushroom-meat mixture on center of tortilla.
- Drizzle dollop of nacho cheese over mushroom-meat mixture. Top meat with one tostada shell then spread thin layer of sour cream over tostada shell.
- Top with shredded lettuce, diced tomatoes and shredded Mexican cheese then one small tortilla. Make sure not to overstuff so wrap doesn’t break apart while cooking.
- Fold edges of large tortilla toward center until completely covered.
- In hot skillet, generously spray with nonstick cooking spray. Carefully place wrap seam side down on skillet. Cook 2-3 minutes until golden brown.
- Flip and cook other side until golden brown. Repeat with remaining mushroom-meat mixture, tortillas and toppings.
- Cut wraps half and serve.

Yield: 16 biscuit bites
- 1 tube biscuit dough (8 biscuits total)
- 7 ounces grated mozzarella cheese
- 1/4 cup jarred jalapenos, chopped
- 8 slices cooked bacon, chopped
- 1 cup Fresh Cravings Restaurant Style Salsa
- nonstick cooking spray
- Preheat air fryer to 350-360 F.
- Divide each biscuit in half by pulling apart in centers. Use hands to flatten each biscuit into circles. Set aside.
- In bowl, mix mozzarella cheese with chopped jalapenos, bacon and salsa.
- Add heaping spoonful into each flattened biscuit and pinch each together tightly to form balls. Top each with small amount of salsa mixture.
- Spray nonstick cooking spray in air fryer and, working in batches, cook biscuit bites 6-9 minutes until golden brown.

- 2 tablespoons vegetable oil
- 1 large chicken breast, finely chopped
- 1/2 cup chopped onion
- 3 cups prepared white rice
- 2 eggs
- 1 cup chickpeas, drained and rinsed
- 1/2 cup roughly chopped fresh parsley leaves
- 1/2 cup crumbled cow’s milk feta cheese
- 1/2 cup grape tomatoes, quartered
- 1/3 cup Kalamata olives, halved
- 2 tablespoons fresh lemon juice

- In wok or large skillet, heat oil over medium-high heat. Add chicken; cook until almost cooked through, stirring frequently, about 5 minutes.
- Add onion; cook 1 minute, stirring frequently.
- Add rice; cook 3 minutes, stirring constantly. Push rice to sides of wok, creating well in center of wok. Crack eggs into well and scramble vigorously with wooden spoon; cook 2 minutes, keeping eggs in well, or until eggs are fully cooked.
- Add chickpeas, parsley, cheese, tomatoes, olives, lemon juice, salt and pepper; cook 2 minutes, or until warmed through, stirring frequently.

Black Beans:
- 1 can (15 ounces) black beans, drained and rinsed
- 3 tablespoons water
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- 1 pinch salt
Quick Pickled Red Onions:
- 1 cup pickling liquid from Aunt Nellie’s Sliced Pickled Beets jar
- 1 small red onion, thinly sliced
Avocado Sauce:
- 2 ripe avocados
- 1 tablespoon lime juice
- 1 pinch salt
- 1/4 teaspoon garlic powder
Tacos:
- 10 tortillas (8 inches)
- fresh chopped cilantro (optional)
- Drain beets; reserve liquid and set aside.
- To make black beans: In saucepan over medium-low heat, combine black beans, water, paprika, garlic powder, cumin and salt. Cook 5-6 minutes, or until warm; taste and adjust seasoning as desired.
- To make quick pickled red onions: In small pot over medium-low heat, heat reserved pickling liquid. Once simmering, add sliced red onion and cook 3 minutes.
- To make avocado sauce: In food processor or blender, pulse avocados, lime juice, salt and garlic powder until smooth.
- Assemble tacos by filling tortillas with sliced beets, black beans, pickled red onions, avocado sauce and cilantro, if desired.
Italian Pasta and Bean Salad
Prep time: 15 minutes
Servings: 6
- 2 cups uncooked rotini pasta
- 1/2 cup prepared pesto
- 1 can (15 ounces) READ 3 Bean Salad, drained

Sloppy Joe Mini Tacos

Yield: 12-15 tacos
- 1 container (16 ounces) Fresh Cravings Restaurant Style Salsa (mild or medium)
- 3 tablespoons ketchup
- 2 tablespoons yellow, brown or Dijon mustard
- 2 teaspoons Worcestershire sauce
- 2 heaping tablespoons light brown sugar
- 2 tablespoons vegetable oil
- 8 ounces ground turkey or pork chorizo
- 8 ounces 90% lean ground chuck or turkey
- salt, to taste
- freshly ground black pepper, to taste
- 1/4 cup water
- 15 tortillas
- 1/4 cup finely chopped fresh cilantro leaves
- 1 cup crumbled cotija cheese
- 1 cup shredded Mexican blend cheese (optional)
- 1/2 red onion, thinly sliced, soaked in ice water 30 minutes and drained
Avocado Mash:
- 1 ripe Haas avocado, halved, pitted and removed from skin
- 2 tablespoons finely diced red onion
- 1/2 lime, juice only
- salt, to taste
- pepper, to taste
- Preheat oven to 300 F.
- In blender or food processor, process salsa until smooth. Remove 1/2 cup processed salsa and set aside for garnish.
- In medium bowl, mix remaining salsa, ketchup, mustard, Worcestershire sauce and brown sugar until combined.
- In large saute pan over high heat, heat oil until it begins to shimmer. Add chorizo and ground meat; season with salt and pepper, to taste. Cook, breaking up meat with wooden spoon, until golden brown and just cooked through, about 8 minutes.
- Add salsa mixture and water; bring to boil, reduce heat to medium and cook, stirring occasionally, until mixture thickens, about 10 minutes. Taste for seasoning.
- Wrap tortillas tightly in foil and heat in oven 10 minutes. Remove and keep wrapped tightly until ready to serve.
- To make avocado mash: In medium bowl, coarsely smash avocado halves with fork. Add onion and lime juice then season with salt and pepper, to taste, and gently mix to combine.
- Place tortillas on flat surface, top each with meat mixture and garnish as desired with reserved salsa, avocado mash, cotija, Mexican cheese and sliced red onion.

- 1/2 cup mayonnaise
- 1/2 cup freshly grated Parmigiano Reggiano cheese
- 1 tablespoon parsley flakes
- 2 tablespoons basil leaves
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- rice, for serving (optional)
- steamed vegetables, for serving (optional)
- Preheat oven to 450 F.
- Line baking sheet with parchment paper. Place fish fillets on baking sheet and set aside.
- In small bowl, stir mayonnaise with cheese, parsley, basil, garlic, salt and pepper. Spread evenly over fillets. Bake 10-12 minutes, or until fish starts looking flaky.
- Switch oven to broil and brown tops of fish until lightly golden. Remove from oven; cool 3-5 minutes.
- Serve with rice and fresh steamed vegetables, if desired.
