  • 2-3 sheets puff pastry dough
  • 5 Envy Apples
  • 2 tablespoons sugar
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon cornstarch
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon cinnamon sugar
  • ice cream, custard or cream, for serving (optional)
  1. Preheat oven to 365 F.
  2. Use two sheets semi-thawed pastry to line fluted tart pan approximately 10 inches, pressing and trimming neatly to fit; chill 15 minutes.
  3. Peel, core and thinly slice apples into large bowl; sprinkle with sugar, lemon zest and cornstarch then toss well to evenly coat.
  4. Arrange apple slices in pastry-lined tart pan, laying flat.
  5. Beat egg with milk. Brush egg wash around pastry rim.
  6. Cut 1/2-inch strips from remaining pastry sheet and make lattice pattern over apples, crimping edges once lattice is completed.
  7. Brush tart with egg wash and sprinkle with cinnamon sugar.
  8. Bake 35-40 minutes, or until pastry is golden. Allow to cool at least 15 minutes before slicing. Serve with ice cream, custard or cream, if desired.

Apple and Date Muffins

Servings: 12

  • 2 Envy Apples
  • 1 tablespoon maple syrup
  • 1 cup flour
  • 1 cup bran flakes
  • 3/4 cup brown sugar
  • 1/2 cup chopped dates
  • 1/2 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 cup butter, melted
  • 1 egg, beaten
  • 3/4 cup milk
  • butter or powdered sugar, for serving (optional)
  1. Preheat oven to 375 F and line muffin pan with cupcake papers.
  2. Peel and core apples and dice finely; toss with maple syrup.
  3. In large bowl, combine flour, bran flakes, brown sugar, dates, pumpkin pie spice and baking powder; mix well.
  4. In separate bowl, whisk melted butter, egg and milk.
  5. Add half maple-apple mixture to dry ingredients.
  6. Pour wet ingredients into dry and fold together until mixed. Spoon evenly into muffin tin cupcake papers. Add 1 teaspoon remaining maple-apple mixture to top of each muffin.
  7. Bake 20-25 minutes until muffin mix is set and apple topping is golden. Allow muffins to cool 5 minutes before removing from tin.
  8. Serve with butter or dust with powdered sugar, if desired.

Stilton Cheese Pizza

Yield: 1 pizza

  • 1 tablespoon pizza sauce
  • 1 tablespoon sweet chili sauce
  • 1 storebought pizza crust
  • 1/2 cup mozzarella cheese, divided
  • 1/3 cup stilton cheese, divided
  • 1 Envy Apple
  • 4 slices prosciutto
  • fresh arugula leaves, for garnish
  • fresh basil, for garnish
  • toasted walnuts (optional)
  1. Preheat oven to 450 F.
  2. Combine pizza sauce and sweet chili sauce. Spread sauce over pizza crust.
  3. Sprinkle with half of the mozzarella cheese and half of the stilton cheese.
  4. Cut apple in half then core and slice into thin wedges. Arrange apple over cheese then top with remaining cheese.
  5. Cook pizza 7-10 minutes until pale golden and starting to bubble. Add prosciutto and cook 2-3 minutes until golden and bubbling.
  6. Serve with fresh arugula and basil. Sprinkle with toasted walnuts, if desired.

Apple, Bacon and Brie Cheese Toasties

Servings: 2

  • 1 tablespoon butter
  • 4 slices sourdough bread
  • 1 teaspoon honey mustard, plus additional for serving (optional)
  • 4 slices cooked bacon
  • 1 Envy Apple, peeled, cored and thinly sliced
  • 1 3/4 ounces brie cheese, sliced
  • side salad, for serving (optional)
  1. Butter one side of each bread slice.
  2. Lay out two slices bread, buttered sides down. Top with honey mustard then layer with two bacon slices, apple slices and brie cheese slices. Top with remaining slices bread, buttered sides up, to create two sandwiches.
  3. Heat grill pan or frying pan and cook sandwiches until golden brown on each side and cheese is beginning to bubble.

  1. On charcuterie board or platter, arrange prosciutto, apple slices, nuts, pomegranate seeds, fig jam and cheddar cheese slices. Serve with crackers.

Prosciutto Pizza

Yield: 8 slices

  • Olive oil
  • flour
  • 1 container (16 ounces) store-bought pizza dough
  • 1/4 cup tomato sauce
  • 4 ounces fresh mozzarella, cubed
  • 5 slices Prosciutto di Parma
  • 6 fresh basil leaves
  1. Remove dough from refrigerator and let sit at room temperature at least 30 minutes. Preheat oven to 500 F. Grease baking sheet with olive oil.
  2. Roll out pizza dough onto floured work surface to form oblong shape about 16 inches long and 12 inches wide. Remove to oiled baking sheet and stretch out edges to fill length of baking sheet.
  3. Bake 4 minutes. Remove from oven and evenly spread tomato sauce over surface, leaving 1/2 inch from edges bare. Dot with mozzarella. Bake until edges are golden and mozzarella is bubbling, about 12 minutes.
  4. Drape prosciutto over mozzarella. Garnish with fresh basil.

Sweet Potato Rounds

Yield: 16-20 rounds

  • 2 medium sweet potatoes
  • 2 teaspoons olive oil
  • salt, to taste
  • 2 tablespoons butter
  • 1 bunch fresh sage, stems removed
  • 4 ounces goat cheese
  • 8 slices Prosciutto di Parma, halved
  1. Preheat oven to 425 F. Line baking sheet with foil or parchment paper. Peel and slice sweet potatoes into 1/2-inch rounds. In medium bowl, toss sweet potatoes with oil and lightly season with salt, to taste. Arrange rounds in single layer on prepared pan; bake until sweet potatoes are lightly browned and tender, about 20 minutes, flipping halfway through.
  2. In small skillet over medium heat, bring butter to simmer. Add half the sage leaves. Cook until crispy, 2-3 minutes. Remove to paper towel and season lightly with salt, to taste. Repeat with remaining sage leaves. Reserve 2 teaspoons butter. In small food processor, combine goat cheese and reserved butter; whirl until smooth.
  3. To make rounds, remove goat cheese to plastic zip-top bag. Cut off one corner and pipe small dollops of cheese onto each round. Top with half slice prosciutto and one crispy sage leaf.

Crudites Platter

Platter:

  • 8 asparagus
  • water
  • 2 soft-boiled eggs
  • 5 baby carrots, halved lengthwise
  • 4 radishes with tops, halved lengthwise
  • 1 head little gem lettuce, quartered
  • 6-8 slices Prosciutto di Parma

Dip:

  • 2 teaspoons white miso
  • 1 tablespoon lemon juice
  • 1 teaspoon water
  • 1/2 cup full-fat Greek yogurt
  • 2 tablespoons chopped herbs (dill, tarragon or parsley)
  • 1/4 teaspoon salt
  • fresh black pepper, to taste
  1. To make platter: Trim asparagus. To blanch, bring pot of water to boil and place asparagus in pot 2-3 minutes. While asparagus is cooking, fill large bowl with ice water. After 3 minutes, plunge asparagus in ice bath and let cool.
  2. To soft-boil eggs, bring pot of water to boil. Gently place room temperature eggs in water and simmer 3-4 minutes. Remove eggs with slotted spoon and cool under running water.
  3. Serve asparagus and eggs alongside baby carrots, radishes and little gem lettuce. Drape prosciutto slices over some vegetables and between others.
  4. To make dip: In small bowl, whisk miso, lemon juice and water until smooth. Add yogurt, herbs and salt. Season generously with cracked pepper, to taste; mix and serve with platter.

  • 12 pieces thinly sliced prosciutto
  • 6 slices tomato
  • 1/3 cup finely grated Parmesan cheese
  • 6 large eggs
  • fresh cracked black pepper, to taste
  • 1/4 cup finely chopped chives
  1. Place rack in upper third of oven and preheat to 350 F.
  2. Line muffin pan with six cupcake liners. Drape two slices prosciutto in each cup over liner, ensuring there are no holes for egg to sneak through.
  3. Place one tomato slice in each cup. Sprinkle 1 tablespoon Parmesan atop each tomato. Crack one egg into each cup. Sprinkle each with fresh cracked black pepper, to taste.
  4. Bake 14-16 minutes, or until eggs are cooked as desired. Top with chives.
  5. Cool 5 minutes before serving warm.

Eggy Lemon Sandwich Cookies

Yield: 16-18 cookies

Dough:

  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 3/4 cup vegetable shortening
  • 1/4 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons whole milk
  • 2 teaspoons vanilla extract

Lemon Curd:

  • 1/2 cup fresh lemon juice
  • 2 teaspoons finely grated lemon zest
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 6 tablespoons unsalted butter, cut into cubes

Buttercream:

  • 1 cup unsalted butter, softened to room temperature
  • 2 cups powdered sugar
  • 1 pinch salt
  • 1 teaspoon finely grated lemon zest
  • 1-2 tablespoons warm milk
  • 1 teaspoon poppy seeds
  1. To make dough: In medium bowl, whisk flour, baking soda, baking powder and salt.
  2. In bowl of stand mixer fitted with paddle attachment, cream together shortening and butter until well combined. Scrape down sides of bowl, add sugar and beat on medium speed until pale and fluffy, 3-5 minutes.
  3. Add egg, milk and vanilla extract; beat until combined. Add dry ingredients and beat on low until dough forms. Scrape down sides of bowl to ensure no dry pockets at bottom. Wrap and refrigerate dough 30 minutes.
  4. Place rack in upper third of oven and preheat to 350 F.
  5. Roll half of dough on lightly floured counter to 1/4-1/2-inch thickness. Cut with 2-3-inch egg cookie cutter and place on parchment paper-lined baking sheet. Use 1-inch round or egg-shaped cookie cutter to cut yolk holes out of half the cookies. Bake 8-10 minutes until just golden around edges. Cool completely before filling.
  6. To make lemon curd: In 2-quart heavy saucepan, whisk juice, zest, sugar and eggs. Stir in butter and cook over low heat, whisking frequently, until curd is thick enough to hold marks of whisk and bubbles appear on surface, about 6 minutes.
  7. Transfer lemon curd to bowl and chill, covered with plastic wrap, until cold, at least 1 hour.
  8. To make buttercream: In medium bowl using electric hand mixer, beat butter until well softened. Add powdered sugar, salt and lemon zest; beat on low. Add milk and whip to combine. Beat in poppy seeds. Transfer frosting to zip-top bag with corner cut off or piping bag with medium round tip. Leave buttercream at room temperature until ready to pipe.
  9. To assemble cookies: Flip each whole egg cookie so bottoms are facing up. Pipe buttercream frosting around edges. Spoon 2-3 teaspoons lemon curd into centers of cookies. Top each with one cookie with hole; press gently and spoon 1 teaspoon lemon curd into cookie hole.

Caramelized Onions:

  • 2 tablespoons olive oil
  • 1/2 cup butter
  • 6 large yellow sweet onions, sliced into thin half circles
  • 3 sprigs fresh thyme
  • coarse kosher salt, to taste

Flatbreads:

  • 4 personal flatbreads
  • 1 cup caramelized onions
  • 4 ounces fresh mozzarella
  • 10 California Prunes, diced small
  • 1 tablespoon fresh thyme leaves
  • sea salt, to taste
  • coarsely ground black pepper, to taste
  1. To make caramelized onions: Preheat oven to 400 F.
  2. In large stockpot over medium-low heat, warm oil and melt butter. Add onions and cover; cook 20-25 minutes, stirring occasionally. Add thyme sprigs and season with salt, to taste; turn pan lid slightly ajar. Place pot in oven 1 hour, stirring occasionally.
  3. To make flatbreads: Preheat oven to broil. On sheet pan, toast flatbreads under broiler 4 minutes, or until toasted, flipping halfway through.
  4. Spread 1/4 cup of caramelized onions over each toasted flatbread. Refrigerate leftover onions.
  5. Tear mozzarella and place over onions. Divide prunes among flatbreads and place flatbreads under broiler 4-6 minutes until cheese has melted and is beginning to brown.
  6. Sprinkle flatbreads with fresh thyme and season with salt and pepper, to taste.

Citrus Breakfast Toast

Prep time: 13 minutes
Cook time: 2 minutes
Servings: 2

Prune Puree:

  • 16 ounces pitted California Prunes
  • 1/2 cup hot water
  • 1 large citrus fruit, peels and piths removed with knife, sliced into rounds
  • 1 1/2 tablespoons raw sugar
  • 4 tablespoons sunflower butter
  • 2 slices whole-grain sourdough bread, toasted to desired darkness
  • 2 tablespoons prune puree
  • 1 tablespoon sunflower seeds
  • 2 California Prunes, finely diced
  1. To make prune puree: In blender, pulse prunes and water to combine then blend until smooth, pourable consistency forms, scraping sides, if necessary.
  2. Store in airtight container up to 4 weeks.
  3. To make bruleed citrus wheels: Place citrus wheels on baking sheet and divide sugar evenly among each piece.
  4. Using circular motion, pass flame of culinary torch repeatedly over sugar until it boils and turns lightly charred and amber.
  5. To build toast: Spread 2 tablespoons sunflower butter on each piece of toast. Top each with 1 tablespoon prune puree spread evenly across sunflower butter. Sprinkle each evenly with sunflower seeds and diced prunes. Top each with half broiled citrus and serve.
  6. Alteration: Use broiler set on high instead of culinary torch to caramelize sugar.

Prune and Almond Truffles

Prep time: 45 minutes
Servings: 24

  • Water
  • 1 cup California Prunes
  • 1 1/2 cups toasted slivered almonds, divided
  • 1/4 teaspoon coarse kosher salt, plus additional, to taste, divided
  • 1 tablespoon cocoa powder
  • 1 1/2 tablespoons vanilla paste or extract
  • 1/4 teaspoon almond extract
  1. Boil water and pour over prunes. Soak 30 minutes; drain.
  2. In food processor fitted with "S" blade, pulse 1/2 cup toasted almonds with salt, to taste, until fine crumbs form. Transfer to shallow bowl and set aside.
  3. Add remaining almonds to food processor with 1/4 teaspoon salt and cocoa powder. Pulse 30 seconds to combine. Add prunes, vanilla paste and almond extract; process until combined. Mixture should be creamy with slight texture from almond crumbs. Transfer prune mixture to bowl and refrigerate 1 hour.
  4. Once chilled, use small cookie scoop to portion out individual truffles on parchment-lined baking sheet. Gently roll each truffle in reserved toasted almond crumbs. Store on parchment-lined plate in refrigerator up to 2 weeks. Serve chilled.

  • 2  teaspoons lemon zest
  • 4  thick slices bread (sourdough or artisan)
  • olive oil
  • 16 ounces Michigan Asparagus
  • 1  tablespoon butter
  • flaky sea salt
  • 1 tablespoon chopped fresh dill, plus additional, for garnish, divided
  • 1 tablespoon fresh lemon juice
  • 4 slices prosciutto, thinly sliced
  • freshly cracked pepper
  1. Stir ricotta and lemon zest.
  2. Heat grill over medium-high heat and brush both sides of each slice of bread generously with olive oil. Grill 3-5 minutes per side, until lightly charred and toasted.
  3. Trim asparagus by breaking off woody bottoms. Slice into 1-inch pieces.
  4. In skillet over medium heat, heat butter. Add asparagus, sprinkle with flaky sea salt and cook, stirring occasionally, 3-4 minutes. Remove from heat and stir in 1 tablespoon fresh dill and lemon juice.
  5. Layer bread with lemon ricotta, asparagus and prosciutto. Top with freshly cracked pepper, flaky sea salt and chopped dill.

Prosciutto-Wrapped Stuffed Turkey Breast

Brine:

  • 1/4       cup salt
  • 1          teaspoon whole black peppercorns
  • 2          bay leaves
  • 2          quarts water
  • 3 1/2-4       pounds turkey breast

Turkey:

  • 2          tablespoons extra-virgin olive oil, divided
  • salt, to taste
  • pepper, to taste
  • 1          tablespoon chopped fresh rosemary
  • 1          tablespoon chopped fresh parsley
  • 1          tablespoon orange zest
  • 4          cloves garlic, minced
  • 1/4-1/3       cup dried cranberries
  • 3/4       cup sliced California Green Ripe Olives, divided
  • 4-5       slices prosciutto

Gravy:

  • 2          tablespoons butter
  • 1          tablespoon all-purpose flour
  • 1-1 ½         cups chicken broth
  • salt, to taste
  • pepper, to taste
  • orange slices, for garnish
  1. To brine turkey breast: In large, non-reactive bowl, mix salt, peppercorns and bay leaves in water. Place turkey breast in brine and cover with additional water, if needed. Place plastic wrap over bowl and refrigerate at least 8 hours or overnight.
  2. To cook turkey breast: Heat oven to 375° F.
  3. Remove turkey breast from brine, rinse and pat dry. On large cutting board with sharp, sturdy knife, slice into thickest portion of turkey and cut lengthwise, but not all the way through.
  4. Brush inside of turkey breast with 1 tablespoon olive oil then sprinkle with salt and pepper, to taste, rosemary, parsley and orange zest. Spread minced garlic, cranberries and 1/2 cup sliced green olives over bottom half of turkey breast then fold top over bottom.
  5. Brush outside of turkey breast with remaining olive oil and place prosciutto slices over top of turkey breast. Using three pieces kitchen twine, tie turkey breast on each end and in middle.
  6. On baking sheet, roast turkey 15 minutes then turn heat down to 350° F and roast 35-45 minutes. Once internal temperature reaches about 155° F, remove from oven and tent foil over top to allow it to continue cooking and stay warm. Let turkey rest about 15 minutes.
  7. Once turkey is cool enough to handle, remove kitchen twine and slice. Arrange slices on platter.
  8. To make gravy: Take remaining juice from baking sheet and add to saucepan over medium heat along with butter. Once butter is melted, sprinkle in flour and whisk. While whisking, add 1 cup chicken broth. If it becomes thick, add 1/2 cup chicken broth, or more, as needed. Let gravy cook several minutes, whisking constantly.
  9. When gravy is done, remove from heat and drizzle over sliced turkey breast. Garnish with remaining green olives and orange slices. Serve warm.

Green Beans with Olive Butter

  • 1/4       cup (1/2 stick) unsalted butter, softened
  • 20        California Black Ripe Olives, chopped
  • 2          shallots, chopped
  • 2          cloves garlic, chopped
  • 4          quarts, plus 1/4 cup, water, divided
  • 1          tablespoon salt, plus additional, to taste
  • 2          pounds green beans, trimmed
  • freshly ground black pepper, to taste
  1. In food processor, pulse butter, olives, shallots and garlic; set aside.
  2. In large saucepan or stockpot, bring 4 quarts water and 1 tablespoon salt to boil.
  3. Add green beans and boil until tender-crisp, but still bright green, about 3-5 minutes. Work in batches, if necessary. Drain well and immediately plunge into bowl of ice water to stop cooking. In large skillet, add remaining water over medium heat. Add blanched beans and toss until heated through.
  4. Toss beans with olive butter to coat. Season, to taste, with salt and pepper. Transfer to serving platter.

Potatoes Au Gratin with Fennel and Olives

  • 1          bulb fennel, washed, stalks removed and cored
  • 1/2       yellow onion
  • 2          large russet potatoes, washed and peeled
  • 1          tablespoon olive oil
  • 1          tablespoon salted butter
  • 1          cup, plus 2 tablespoons, heavy whipping cream, divided
  • 1/2       California Ripe Black Ripe Olives, sliced
  • 1/2       teaspoon kosher salt
  • 1/8       teaspoon black pepper
  • 3/4       cup Gruyere cheese, grated, divided
  • 3/4       cup Jarlsberg cheese, grated, divided
  1. Heat oven to 350° F.
  2. Using mandoline or handheld slicer, thinly slice fennel, onion and potatoes.
  3. In medium pan, heat olive oil and butter then saute onion and fennel over medium-low heat 15 minutes, or until tender. Remove from heat.
  4. In large bowl, combine sliced potatoes with 1 cup cream, olives, salt, pepper and all but 2 tablespoons of each cheese.
  5. Add cooked fennel and onion to bowl and stir to combine.
  6. Transfer potato mixture to 8-by-8-inch baking dish or deep pie plate and flatten surface so potatoes are mostly submerged in cream.
  7. In small bowl, combine remaining cheese with remaining cream. Sprinkle cheese over top of potatoes evenly.
  8. Bake 45-60 minutes, or until potatoes are tender and top is golden brown and bubbly. If needed, tent with foil to prevent top from becoming too brown.
  9. Cool at least 15 minutes before serving.

To help keep that fresh-picked flavor, the Michigan Asparagus Advisory Board recommends storing asparagus upright in about an inch of water after trimming the ends. Loosely cover the container with plastic and keep it refrigerated.

Asparagus Crust White Chicken Pizza

Asparagus Crust:

  • 2          cups cut-up fresh or frozen Michigan asparagus, blanched
  • 1          egg
  • 2/3       cup grated Parmesan cheese
  • 2/3       cup shredded mozzarella cheese
  • 1          tablespoon lemon pepper seasoning


White Sauce:

  • 2          tablespoons butter
  • 1/4       cup chopped leeks
  • 1          clove garlic, minced
  • 1          tablespoon flour
  • 3/4       cup milk
  • 1/4       cup grated Parmesan cheese
  • 1          cup cubed rotisserie chicken
  • 1          cup shredded mozzarella cheese
  • 1/2       cup frozen green peas, thawed
  • 1/2       cup cut-up fresh or frozen Michigan asparagus, blanched and seasoned with avocado oil and lemon pepper seasoning
  • 1/4       cup chopped prosciutto
  • fresh chives, for garnish
  • fresh basil, for garnish
  1. Heat oven to 375° F.
  2. To make Asparagus Crust: In food processor, puree blanched asparagus until smooth. In large bowl, mix asparagus puree, egg, Parmesan, mozzarella and lemon pepper seasoning until thoroughly combined.
  3. Press asparagus mixture into circular shape on parchment paper-lined pizza stone or baking sheet. Place layer of paper towel over crust and gently press down to remove excess moisture. Repeat until paper towel is no longer absorbing moisture. Discard wet paper towels.
  4. Bake 12-13 minutes.
  5. To make White Sauce: In saucepan over medium heat, cook butter, leeks and garlic 3-4 minutes. Slowly whisk in flour and cook 1-2 minutes. Slowly add in milk, continue whisking and cook until thickened. Add Parmesan then remove from heat and set aside.
  6. Pour white sauce over partially baked asparagus crust and top with chicken and mozzarella. Add peas, asparagus and prosciutto. Bake 5-8 minutes, or until cheese is thoroughly melted. Garnish with fresh chives or basil.

Campanelle with Prosciutto and Peas

Cook time: 10 minutes
Prep time: 10 minutes
Servings: 6

  • 12 ounces uncooked campanelle pasta
  • 1 tablespoon Bertolli Extra-Virgin Olive Oil
  • 1 large shallot, finely chopped
  • 1/2 cup dry whitewine
  • 1/2 cup frozen peas
  • 3 ounces thinly sliced prosciutto
  • 1 jar (15 ounces) Bertolli Organic Creamy Alfredo Sauce
  • 4 ounces Fontina cheese, shredded
  • 6 eggs
  • 1 teaspoon freshly ground black pepper
  1. In pot of salted water, cook pasta 2 minutes less than directed on package. Drain pasta.
  2. In large skillet over medium-high heat, heat oil and shallots. Cook 3-4 minutes, or until softened. Add wine; cook 3-4 minutes, or until most liquid has evaporated. Stir in peas, prosciutto, Alfredo sauce and cheese. Add pasta; toss gently. Cook and stir 1-2 minutes to coat pasta with sauce.
  3. In saucepan, bring water to boil and add eggs. Cook 6 minutes. Transfer eggs to ice water and cool before peeling.
  4. Top each serving with soft-set egg and black pepper.

Note: Gouda or Gruyere can be substituted for Fontina. Unpeeled, cooked eggs can be stored in refrigerator up to one week.
