Peanut Butter Jelly Ice Cream

  • 1 cup whole milk
  • 1/2 cup Premier Protein Strawberries & Cream Protein Shake
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon salt
  • 1 large egg, lightly beaten
  • 2/3 cup creamy peanut butter
  • 2 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • 1/2 cup sugar-free strawberry jelly
  1. In large, heavy saucepan, heat milk, protein shake, brown sugar and salt until bubbles form around sides of pan. Whisk small amount of hot mixture into egg. Return to pan, whisking constantly.
  2. Cook and stir over low heat until mixture thickens and coats back of spoon. Remove from heat; whisk in peanut butter. Quickly transfer to bowl; place in ice water and stir 2 minutes. Stir in cream and vanilla. Press wax paper onto surface of custard. Refrigerate several hours or overnight.
  3. Fill cylinder of ice cream freezer 2/3 full; freeze according to manufacturer's directions.
  4. When ice cream is frozen, spoon into freezer container, layering with jelly; freeze 2-4 hours before serving.

Chocolate Ice Cream with “Caramel” Sauce

  • 1 large sweet potato
  • 1 bag (10 ounces) dark chocolate chips, plus additional for topping (optional)
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon fine sea salt
  • 1/4 cup coconut sugar
  • 1 Premier Protein Chocolate Protein Shake

"Caramel" Sauce:

  • 3 tablespoons coconut oil (measured when solid)
  • 3 tablespoons real maple syrup
  • 1 1/2 tablespoons almond butter
  • 1/8 teaspoon fine sea salt
  • 1/4 teaspoon pure vanilla extract
  1. Wash and scrub sweet potato. Pierce with fork several times. Place on microwave-safe plate and microwave 5 minutes; flip and microwave 5 minutes. Allow to cool.
  2. In microwave-safe bowl, microwave chocolate chips in 20-second increments, stirring between each increment until smooth and melted. Set aside.
  3. Remove sweet potato skin and thoroughly mash. Pack into 3/4 cup measuring cup. Place in large blender.
  4. Add melted chocolate to blender along with vanilla, sea salt, coconut sugar and chocolate protein shake.
  5. Place lid on blender and blend on high at least 1 minute, or until ingredients are smooth and incorporated.
  6. Transfer to ice cream maker and prepare according to manufacturer's directions then transfer to airtight container and freeze 2-3 hours.
  7. To make "caramel" sauce: In microwave-safe bowl, microwave coconut oil and syrup 30 seconds. Stir and microwave 30 seconds, or until melted and smooth. Stir in almond butter and whisk until smooth. Add sea salt and vanilla extract; whisk to combine.
  8. Set "caramel" sauce aside at room temperature about 30 minutes. Top ice cream with sauce and additional chocolate chips, if desired.

  • 3          Envy Apples
  • 1          bag crushed pecans
  • 1          jar caramel dip
  1. Using melon ball scoop, carve round apple pieces, starting at skin and rotating inward.
  2. Insert long toothpick into each round apple piece.
  3. Place crushed pecans in small bowl.
  4. Roll round apple pieces in caramel dip then roll in crushed pecans.
  5. Place coated apple bites on serving tray and refrigerate until just prior to serving.

Yield: 1 spider web

  • 1/4 cup butter
  • 8 cups mini marshmallows, divided
  • 1 tablespoon vanilla extract
  • 9 cups popped popcorn, divided
  • 1 cup semisweet chocolate chips, divided
  • black string licorice
  • candy eyes
  1. Line round pizza pan with parchment paper; set aside. In large saucepan over low heat, melt butter; stir in 5 cups marshmallows, stirring constantly, 3-4 minutes, or until completely melted. Stir in vanilla. Remove from heat. Stir in 8 cups popcorn until coated. Spread onto prepared pizza pan in irregular round shape, about 1-inch thick, to resemble spider web. Refrigerate about 15 minutes, or until firm.
  2. In microwave, melt remaining marshmallows about 20 seconds, or until melted. Using spatula, string strands of melted marshmallow over popcorn spider web to create cobweb effect.
  3. In heatproof bowl set over saucepan of hot (not boiling) water, melt 3/4 cup chocolate chips; cool slightly. In large bowl of remaining popcorn, pour chocolate over popcorn, folding gently to coat. Spread mixture on waxed paper-lined baking sheet, separating into eight small clusters. Affix two candy eyes to each popcorn cluster. Refrigerate 10-15 minutes, or until set.
  4. Melt remaining chocolate chips. Cut licorice into 1-inch lengths. Using small spoon, dab circles of chocolate onto spider web. Affix chocolate-coated popcorn onto chocolate circles. Affix licorice lengths to chocolate popcorn clusters to resemble spider legs.
  5. Refrigerate 15 minutes, or until set. To serve, cut into smaller pieces.

Witchy Popcorn Balls

Yield: 8 popcorn balls

  • 16 chocolate wafer cookies
  • nonstick cooking spray
  • 3 quarts popped popcorn
  • 4 tablespoons (1/2 stick) butter or margarine
  • 3 cups miniature marshmallows
  • 3 tablespoons (1/2 of 3-ounce box) lime gelatin dessert mix
  • green food color (optional)
  • 3/4 cup chocolate chips
  • licorice strings
  • 8 chocolate ice cream cones
  • orange sugar sprinkles, placed in small dish
  • jelly beans
  • candy corns
  1. Spread sheet of waxed or parchment paper over work surface and place wafer cookies on it.
  2. Spray large mixing bowl with nonstick cooking spray and place popcorn inside.
  3. In medium saucepan over low heat, melt butter. Stir in marshmallows and gelatin powder until marshmallows are melted and mixture is smooth. Adjust color with 1-2 drops food color, if desired. Pour mixture over popcorn and mix until coated.
  4. Spray hands with nonstick cooking spray and press firmly to form into eight balls. Place balls on eight wafer cookies. Press candy decorations into popcorn balls to form "eyes," "nose" and "mouth."
  5. In small, microwave-safe bowl, heat chocolate chips, covered, 10 seconds. Stir to aid melting. Repeat as needed until chocolate is melted and smooth.
  6. Spoon about 1/2 teaspoon melted chocolate on top of each popcorn ball. Press licorice strings into chocolate to form "hair."
  7. Dip cone edges into melted chocolate then orange sugar sprinkles. Place on remaining wafer cookies to form "witches' hats." Place hats on popcorn balls. Allow chocolate to set about 45 minutes before serving.
  8. Serve or seal individually in plastic wrap.

Green Halloween Zombies

Yield: about 7 pieces

  • 2 1/2 quarts popped popcorn
  • 6 tablespoons butter or margarine
  • 3 cups mini marshmallows
  • 4 tablespoons lime gelatin powder
  • red gum balls
  • candy corn
  • flat green candy strips or fruit leather
  • green sugar sprinkles
  1. Place popcorn in large bowl; set aside.
  2. In medium saucepan over medium heat, melt butter. Stir marshmallows into butter until melted. Stir in gelatin powder until evenly colored.
  3. Pour melted mixture over popcorn and stir until evenly coated. With buttered hands, shape popcorn into seven ovals.
  4. Flatten one oval slightly and squeeze one end to form "skull" shape. Place on parchment-lined baking sheet. Repeat with remaining ovals.
  5. To decorate: Press two gumballs into each skull to form "eyes." Press candy corn into skull to form "teeth." Use scissors to trim candy strips and press into top for "hair." Sprinkle with sugar sprinkles.
  6. Allow "zombies" to set about 20 minutes before wrapping individually in plastic wrap or serve immediately.

Popcorn Caramel Apples

Yield: 4 apples

  • 1 quart freshly popped popcorn
  • 1 package (9 1/2 ounces, 35 total) caramels, unwrapped
  • 1/4 cup light cream or half-and-half
  • 4 lollipop sticks or wooden candy apple sticks
  • 4 apples
  • 1/2 cup chocolate chips
  • sugar sprinkles
  • decorative ribbon (optional)
  1. Place popcorn in large bowl; set aside. Place sheet of waxed paper on work surface.
  2. In small saucepan over medium-low heat, heat caramels and cream. Stir frequently until caramels are melted and cream is blended into caramels.
  3. Push one stick into apple center and dip into caramel. Spoon caramel over apple to coat. Repeat with remaining apples
  4. Place caramel-coated apple in bowl of popcorn and press popcorn onto caramel to cover. Place apple on waxed paper to set; repeat with remaining apples.
  5. In small, resealable plastic bag, microwave chocolate chips 10 seconds and press chips to aid melting. Repeat, heating at 10-second intervals, until chips are completely melted. Cut small corner off bag and squeeze chocolate onto each apple, allowing chocolate to drip down sides. Sprinkle with sugar sprinkles.
  6. Tie bow to each apple stick, if desired. To serve, cut apples into slices.

  • 1/2 cup all-purpose flour

  • 1/2 orange, zest only
  • 1 tablespoon orange juice
  • vanilla ice cream
  1. Preheat oven to 350 F.
  2. In bowl, stir together sugar and ground cinnamon.
  3. Toss apples in lemon juice then in cinnamon sugar mixture. Spread in 9-inch pie dish.
  4. In another bowl, stir together brown sugar, flour and oats. Using hands or fork, cut in butter until pea size crumbs form. Sprinkle evenly over apples.
  5. Bake 40-45 minutes until mixture is bubbling and golden brown. Remove from oven and let cool 15 minutes.
  6. In small pot, whisk caramel, salt, orange zest and orange juice until warm.
  7. Spoon apple oat crumble over large scoop vanilla ice cream and top with salted citrus caramel.

Apple Stuffing Bites with Rosemary Gravy

  • 1 box stovetop stuffing
  • 2 tablespoons butter
  • 2 cups diced Envy Apples
  • 1/2 onion, diced small

Gravy:

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups beef broth
  • 2 teaspoons kosher salt
  • 20 turns fresh cracked pepper
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon finely chopped rosemary
  1. Preheat broiler.
  2. Cook stuffing according to package directions; set aside and allow to cool slightly.
  3. In large saute pan, melt butter saute apples and onion until tender. Set aside to cool slightly.
  4. Stir together stuffing and apple mixture. Spread stuffing on sheet tray and allow to cool in refrigerator.
  5. After cooling, form stuffing into medium bites and place on sheet tray lined with parchment paper.
  6. Broil bites until golden brown and slightly crispy.
  7. To make gravy: In small pot, melt butter and whisk in flour. Cook flour 1 minute, whisking frequently.
  8. Whisk in beef broth, salt, pepper and Worcestershire sauce; bring to boil, whisking frequently. Remove from heat and stir in rosemary. If desired, continue gently simmering gravy to thicken.
  9. Arrange stuffing bites in serving dish and drizzle with gravy. Serve hot.

Pumpkin Spice Apple Cider

  • 1 Envy Apple, diced
  • 1 tablespoon butter
  • 1 teaspoon pumpkin spice
  • 2 ounces bourbon
  • 4 ounces pumpkin spice apple cider
  • demerara sugar
  • Envy Apple slices, for garnish
  • rosemary, for garnish
  • cinnamon stick, for garnish
  1. In pan over medium heat, saute diced apples in butter and pumpkin spice 5-10 minutes.
  2. In glass, combine bourbon and pumpkin spice apple cider; top with sauteed apples.
  3. Add demerara sugar then garnish with apple slices, rosemary and cinnamon stick.

Bell-Issimo Brie Melt

  • 1 round brie (6-8 ounces)
  • 2 Envy Apples
  • 1/4 cup walnuts
  • 1/4 cup dried cranberries
  • firm crackers
  1. Unwrap brie and place on microwave-safe dish. Cut off top of brie round and microwave 60 seconds until middle is soft.
  2. Slice apples into thick wedges.
  3. Top brie with half the apples, crushed walnuts and dried cranberries.
  4. Serve with firm crackers and remaining apple wedges.

Caramel Sticky Rolls

There are no alarms set and you are cuddled up in bed after a good night’s sleep. It’s late morning and there is nowhere to go, no rushing around to do. No school bus, no work to be done, just relaxing at home with loved ones. However, breakfast is calling your name.

Your stomach rumbles as your stumble toward the kitchen. You need something quick and effortless. The kids will be up soon and you know food will be on their minds.

When you’re in a pinch, there is nearly nothing better to make than something sweet and filling for a weekend family breakfast.

Try these simple and delicious Caramel Sticky Rolls for an easy breakfast for all. The rolls are fluffy, a little crunchy and drizzled with caramel topping.

Start by sprinkling some flour on the countertop. Roll out one sheet of puff pastry. Drizzle and spread caramel sauce on the puff pastry.

Sprinkle 1/2 cup of chopped walnuts on top then roll up the puff pastry and cut it into about nine pieces to place inside a muffin tin.

Bake for 22 minutes and cool. If you like your rolls super sweet, drizzle with some extra caramel sauce.

  • Nonstick cooking spray
  • flour, for rolling pastry
  • 1          frozen puff pastry, thawed
  • caramel sauce, divided
  • 1/2       cup walnuts, chopped
  • powdered sugar
  1. Heat oven to 400 F.
  2. Spray muffin tin with nonstick cooking spray.
  3. Sprinkle flour on work surface. Flatten pastry sheet and roll into rectangle.
  4. Drizzle caramel sauce over pastry and spread within 1/2 inch of edges.
  5. Sprinkle chopped walnuts over caramel sauce.
  6. Starting on short end, evenly roll pastry with filling to other end.
  7. Cut pastry into nine pieces. Place pastries cut side up into muffin cups.
  8. Bake 22 minutes, or until golden brown. Immediately remove from pan to wire rack. Let cool 10 minutes. Drizzle with additional caramel sauce and dust with powdered sugar.

  • 1          package (8 ounces) cream cheese, softened
  • 1          cup powdered sugar
  • 1          cup peanut butter
  • 1/2       cup milk
  • 1          container (8 ounces) whipped topping
  • 1          graham cracker crust
  • chocolate chips
  • chocolate syrup
  • caramel syrup
  1. In bowl of stand mixer, beat cream cheese until fluffy. Add powdered sugar and peanut butter; mix until blended. Add milk; mix until blended. Fold in whipped topping.
  2. Pour into crust. Sprinkle with chocolate chips. Drizzle with chocolate syrup and caramel syrup. Freeze until set.

No Bake Chocolate Caramel Cheesecake

  • 10        graham crackers, crumbled
  • 7          tablespoons butter, melted
  • 1/4       cup sugar
  • 1          tablespoon cinnamon
  • caramel sauce, divided
  • 16        ounces cream cheese
  • 7          tablespoons powdered sugar
  • 1          cup whipping cream
  • chocolate covered caramels
  1. Place graham crackers in re-sealable plastic bag. Using rolling pin or soup can, roll graham crackers into fine crumbs.  
  2. In medium bowl, add cracker crumbs, melted butter, sugar and cinnamon; stir until combined. Press into bottom of pie plate. Drizzle caramel sauce over crust; set aside.
  3. In medium bowl, combine cream cheese, powdered sugar and whipping cream. Pour over graham cracker crust. Refrigerate 24 hours.
  4. Place chocolate caramel candy pieces around pie. Drizzle with caramel sauce. Refrigerate leftovers.

  • 1          package (15 ounces) pie crust

Filling:

  • 24        caramels, unwrapped
  • 1/3       cup water
  • 2/3       cup brown sugar
  • 2/3       cup sour cream
  • 1          teaspoon vanilla extract
  • 2          eggs, beaten
  • 1/2       cup walnuts, chopped
  • 1/3       cup grated sweet baking chocolate, divided

Topping:

  • 1          cup white chocolate chip morsels
  • 1/4       cup milk
  • 1          cup whipping cream
  • 2          tablespoons grated sweet baking chocolate
  1. Heat oven to 450° F. Prepare pie crust in 9-inch glass pie dish. Bake 8-9 minutes, or until lightly brown.
  2. To make filling: In medium bowl, combine caramels and water. Melt in microwave, stirring frequently. Stir in brown sugar, sour cream, vanilla extract, eggs and walnuts.
  3. Reduce oven to 350° F. Pour filling into cooled pie shell. Return to oven. Bake 30-40 minutes, or until edges of filling are set.
  4. Cool 15 minutes. Sprinkle 3/4 cup grated chocolate over pie. Refrigerate 2 hours.
  5. To make topping: In small glass bowl, combine white chocolate morsels and milk. Melt in microwave, stirring frequently. Set aside.
  6. In small bowl, beat whipping cream until peaks form. Fold in melted white chocolate mixture. Spread over cooled filling. Sprinkle with remaining grated chocolate.
  7. Refrigerate until ready to serve.

Rocky Road Cookie Pizza

Recipe adapted from Pillsbury

  •             Nonstick cooking spray
  • 1          roll (16 1/2 ounces) refrigerated sugar cookie dough
  • 1          cup miniature marshmallows
  • 1/2       cup salted peanuts
  • 1/2       cup semisweet chocolate chips
  • 1/3       cup caramel topping
  1. Heat oven to 350° F.
  2. Grease 12-inch pizza pan with nonstick cooking spray. In pan, break up cookie dough. In bottom of pan, evenly spread cookie dough to form crust. Bake 12-17 minutes, or until light golden brown.
  3. Sprinkle marshmallows, peanuts and chocolate chips evenly over crust. Bake 8-10 minutes, or until toppings are melted. Drizzle with caramel topping. Cool completely, about 1 hour. Cut into wedges.

Cinnamon Raisin Biscuits with Caramel Glaze

Makes: 1 dozen biscuits

Biscuits:

  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cut into 1/2-inch cubes
  • 2/3 cup milk
  • 1/4 teaspoon Wilton Treatology Warm Cinnamon Graham Flavor Concentrate
  • 1 cup raisins

Glaze:

  • 2/3 cup confectioners' sugar
  • 1 tablespoon half and half
  • 4 drops Wilton Treatology Salted Caramel Flavor Concentrate
  1. Heat oven to 450°F. Prepare cookie sheet with parchment paper.
  2. In large bowl, stir together flour, granulated sugar, baking powder and salt. Using a pastry blender or two forks, cut in butter until mixture resembles coarse crumbs.
  3. In measuring cup, stir together milk and Warm Cinnamon Graham Flavor Concentrate. Stir milk mixture and raisins into flour mixture until a dough forms.
  4. Turn dough out onto floured surface and knead 3-4 times or until dough comes together. Roll dough to 1-inch thickness and cut biscuits using a 2-inch round cutter, re-rolling dough as necessary. Place biscuits onto prepared pan.
  5. Bake 8-10 minutes or until edges are lightly golden. Cool on pan on cooling grid 5 minutes.
  6. For glaze, whisk together confectioners' sugar, half and half and Salted Caramel Flavor Concentrate. Spoon glaze over biscuits and serve warm.

Coconut Caramel Pancakes

Makes: 12-15 pancakes

Pancakes:

  • 1 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 1/2 teaspoons Wilton Treatology Toasted Coconut Flavor Concentrate

Flavored Butter:

  • 1/2 cup (1 stick) butter, softened
  • 1/4 cup firmly-packed dark brown sugar
  • 3/4 teaspoon Wilton Treatology Salted Caramel Flavor Concentrate
  • 1/4 teaspoon salt
  1. In large bowl, combine flour, granulated sugar, baking powder and salt.
  2. In medium bowl, combine milk, egg, butter and Toasted Coconut Flavor Concentrate. Create well in center of flour mixture and pour in milk mixture. Whisk until all ingredients are incorporated.
  3. Heat large skillet over medium-high heat. Lightly spray with vegetable spray. Pour 3 tablespoons batter onto hot skillet, flipping once when pancake stops bubbling and sides are dry.
  4. In small bowl stir together butter, brown sugar, Salted Caramel Flavor Concentrate and salt until combined.
  5. Serve pancakes warm with flavored butter.
