Sensational Snacktivities at Home

“Jellin’-Melon” Snacks

Prep Time: 15 min. plus refrigerating
Makes: 8 servings

  • 1 cantaloupe, or other melon, cut lengthwise in half
  • 3/4 cup boiling water
  • 1 pkg. (3 oz.) JELL-O Lime Flavor Gelatin
  • 1/2 cup cold water
  1. REMOVE seeds from melon halves; cut thin slice from bottom of each half. Scoop out melon flesh, leaving 1-inch-thick shells. Place upside-down on paper towels to drain.
  2. ADD boiling water to gelatin mix; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 15 min. or until slightly thickened. Pour into melon shells.
  3. REFRIGERATE 3 hours or until gelatin is set. Cut into wedges.

JELL-O JIGGLERS

Prep Time: 10 min.
Total Time: 3 hours 10 min. (incl. refrigerating)
Makes: 2 doz. or 24 servings, 1 JIGGLER each

  • 2 1/2 cups boiling water (Do not add cold water)
  • 2 pkg. (6 oz. each) JELL-O Gelatin, any flavor
  1. STIR boiling water into dry gelatin mix in large bowl at least 3 min. until completely dissolved. Pour into 13x9-inch pan.
  2. REFRIGERATE at least 3 hours or until firm.
  3. DIP bottom of pan in warm water 15 sec. Cut into 24 decorative shapes using 2-inch cookie cutters, being careful to cut all the way through gelatin to bottom of pan. Lift JIGGLERS from pan. Reserve scraps for snacking. Store in tightly covered container in refrigerator.

Finger Gelatin

Prep Time: 20 min.
Total Time: 1 hour 20 min.
Makes: 12 servings, about 12 squares each

  • 3 pkg. (4-serving size each) JELL-O Raspberry Flavor Gelatin
  • 4 envelopes KNOX Unflavored Gelatin
  • 4 cups boiling water
  1. MIX both gelatins in large bowl; stir in boiling water until completely dissolved.
  2. POUR into 13x9-inch pan. Refrigerate 1 hour or until firm.
  3. CUT gelatin mixture into small squares. Store in tightly covered container in refrigerator.

 

Layered Mousse Bites

Prep Time: 10 min.
Total Time: 3 hours 10 min.
Makes: 9 servings

  • 2 1/2 cups boiling water
  • 2 pkg. (3 oz. each) JELL-O Strawberry Flavor Gelatin
  • 2 cups thawed COOL WHIP Whipped Topping
  1. ADD boiling water to gelatin mixes in medium bowl; stir with whisk for 2 minutes until completely dissolved. Stir in COOL WHIP until well blended.
  2. POUR into 8-inch square pan.
  3. REFRIGERATE for 3 hours or until firm. Cut into 36 pieces.

 

Patriotic Parfaits

Prep Time: 10 min.
Total Time: 4 hours 10 min.
Makes: 9 servings

  • 2 cups boiling water
  • 1 pkg. (6 oz.) or 2 pkg. (3 oz. each) JELL-O Berry Blue Flavor Gelatin
  • 2 cups cold water
  • 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
  • 1 cup fresh strawberries, halved
  1. ADD boiling water to gelatin mix in large bowl; stir for 2 minutes until completely dissolved. Stir in cold water. Pour into 9 parfait or dessert glasses.
  2. REFRIGERATE for 4 hours or until firm.
  3. SPOON 2 cups COOL WHIP over desserts; top with berries and remaining COOL WHIP.

 

Juicy Gelatin

Prep Time: 5 min.
Total Time: 4 hours 5 min.
Makes: 4 servings

  • 1 cup boiling water
  • 1 pkg. (4-serving size) JELL-O Strawberry Flavor Sugar Free Gelatin
  • 1 cup cold orange juice
  1. STIR boiling water into gelatin in medium bowl for at least 2 minutes until completely dissolved. Stir in orange juice.
  2. REFRIGERATE for 4 hours or until firm.

Playing With Food

Helping kids learn to love healthy eating

(Family Features) According to the 2007 Produce For Kids study, 96 percent of children don’t get the recommended five servings of fruits and vegetables every day. That won’t surprise a lot of parents. Getting children to eat any fruits or vegetables at all can be a big challenge.  With 39 percent of all U.S. children overweight or obese, getting kids to make better food choices is more important than ever.

Fruits and vegetables are loaded with vitamins, nutrients and fiber, are low in calories and can help prevent many diseases, including high blood pressure, heart disease and some cancers. But kids aren’t compelled by the nutritional benefits of produce. They want to have fun eating food they like. So they need some help to become healthy eaters.
How can a parent get fruit-phobic or veggie-avoiding kids to eat more of what they really need? Mypyramid.gov, a Web site dedicated to helping people make smart food choices, has some tips for coping with picky eaters.

  • Let your kids be “produce pickers.” Let them help pick out fruits and veggies at the store.
  • Kids like to try foods they help make. All of that mixing, mashing and measuring makes them want to taste what they are creating.
  • Make meals a stress-free time. If meals are times for family arguments, your child may learn unhealthy attitudes toward food.
  • Offer choices. Rather than ask “Do you want broccoli for dinner?” ask “Which would you like for dinner: broccoli or cauliflower?”

Another suggestion, from The Produce For Kids study, is to use dips to get kids to eat more fruits and vegetables. Sixty-eight percent of the moms surveyed said that their children ate more fruit and vegetables when they were served with dip.

  • Potato pal ― Top half a small baked potato with eyes, ears, and a smile. Try peas for eyes, a halved cherry tomato for a nose, and a low-fat cheese wedge as a smile.
  • Fruit smoothies ― Blend fresh or frozen fruit with yogurt and milk or juice. Try 100 percent orange juice, low-fat yogurt, and frozen strawberries.
  • Ants on a log ― Thinly spread peanut butter or apple dip on narrow celery sticks. Top with a row of raisins or other diced dried fruit.
  • Fruit kabobs – Spear chunks of pineapple, banana and melon on skewers or chopsticks. Let kids dunk them in a fruit dip.

Picky eaters don’t have to stay picky eaters. With some encouragement and creative ideas from parents, they can learn to love eating what’s best for them.

Open Face Caramel Peanut Butter Sandwich

Prep Time: 5 minutes
Servings: 2

  • 2 tablespoons Marzetti Caramel Apple Dip
  • 2 tablespoons favorite peanut butter
  • 2 slices favorite bread
  • Sliced apples, peanuts, dried cranberries or raisins
  1. In a small bowl, mix together dip and peanut butter until smooth.
  2. Spread two tablespoons of caramel mixture on each slice of bread.
  3. Arrange sliced apples, peanuts and dried fruit atop each sandwich and serve.

Put some crunchy fun into snack time with this fruity rice cake. This is one treat the kids will love making themselves — just set out the ingredients and let them build a fruit-filled snack!

Rice Cake Snack

Prep Time: 3 minutes
Servings: 1

Pretzel Stick Roll Ups

  • Small pretzel sticks (There are a number of varieties available — make sure to select a sturdy kind.)
  1. On clean work surface (plastic cutting board or plate will do), lay out cheese slices. Place 1 ham slice on each Swiss cheese slice and bologna on American cheese. Starting at one end, roll up each pair of slices and skewer with pretzel stick. (Grownup helper may need to assist small hands with pretzel spearing.)

Mini Popcorn Balls with Chocolate ‘Fondue’


Prep time: 25 minutes
Servings: 12

  • 1 bag Orville Redenbacher's Smart Pop! 94 Percent Fat-Free Butter Microwave Popcorn
  • nonstick cooking spray
  • 1/4 cup stick butter or margarine (1/4 cup = 1/2 stick)
  • 1 package (10 ounces) marshmallows
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups light chocolate syrup
  • colored candy sprinkles (optional)
  1. Prepare popcorn according to package directions. Remove all un-popped kernels. Spray large bowl with nonstick spray; add popped corn.
  2. In medium saucepan over medium heat, melt butter. Add marshmallows and vanilla. Heat 5 minutes, or until marshmallows melt, stirring frequently. Pour over popcorn; mix well with spoon sprayed with cooking spray. Moisten hands with water before shaping popcorn mixture into 24 small balls, about 1/3-cup popcorn mixture each.
  3. In small saucepan, heat chocolate syrup over medium heat 5 minutes, or until warm, stirring occasionally. Transfer to small, fondue-style pot.
  4. Use wooden skewers or fondue forks to pick up popcorn balls and dip into chocolate and sprinkles, if desired.

Caramel-Nut Popcorn Crunch

Yield: 20 pieces

  • 10 cups freshly popped popcorn
  • 2 cups whole almonds
  • 1 cup firmly packed light brown sugar
  • 1/2 cup butter or margarine
  • 1/4 cup light corn syrup
  • 2 teaspoons vanilla
  • 1 teaspoon almond extract
  • 1/2 teaspoon baking soda
  1. Heat oven to 225° F. Spray 15-by-10-inch baking sheet with nonstick spray.
  2. In large bowl, mix popcorn and almonds.
  3. In medium saucepan, combine brown sugar, butter and corn syrup. Over low heat, stir mixture until sugar dissolves. Increase heat to high and boil 5 minutes. Remove from heat; stir in vanilla, almond extract and baking soda.
  4. Pour over popcorn and almonds, immediately stirring gently to coat. Pour mixture onto prepared baking sheet, spreading evenly.
  5. Bake 1 hour. Cool completely. Break into pieces and store in airtight container.

Maple Bacon Popcorn Mix

Yield: 2 quarts

  • 6 slices thick-cut bacon
  • 1/4 cup pure maple syrup, divided
  • 8 cups popped popcorn
  • 2/3 cup pecan halves, coarsely chopped
  • 2/3 cup dried cranberries
  • 2 tablespoons butter or margarine
  • 1/4 teaspoon coarse ground black pepper
  • 1/4 teaspoon maple extract
  1. Heat oven to 400° F.
  2. Line jelly roll pan with foil. Place wire rack in pan. Arrange bacon in single layer on rack. Bake 15 minutes, or until ends of bacon start to curl. Remove and reserve 2 tablespoons bacon drippings. Brush bacon with 2 tablespoons maple syrup; bake 15 minutes until browned. Cool then coarsely chop bacon.
  3. In large bowl, combine popcorn, pecans and cranberries.
  4. Combine butter, black pepper, maple extract, remaining maple syrup and reserved bacon drippings. Cook over low heat until butter is melted. Drizzle over popcorn mixture and mix thoroughly.
  5. Spread popcorn mixture in jelly roll or roasting pan. Bake 5 minutes. Toss in bacon pieces. Serve warm.

Poppy Chow

Yield: 2 quarts

  • 2 quarts popped popcorn
  • 1/4 cup (1/2 stick) butter or margarine
  • 1/2 cup creamy peanut butter
  • 1 cup milk or semi-sweet chocolate chips
  • 1 cup confectioners’ sugar
  1. Place popcorn in large bowl; set aside.
  2. In microwave safe bowl, combine butter, peanut butter and chocolate chips. Microwave 2 minutes; stir until smooth.
  3. Pour chocolate mixture over popcorn and stir until well coated. Sprinkle confectioners’ sugar over popcorn and stir until coated.
  4. Cool to room temperature before serving. Store in airtight container, refrigerated, up to 24 hours.

English Toffee Popcorn Bars

Yield: 20 bars

  • 2 1/2 quarts popped popcorn
  • 1 cup peanuts
  • 1 cup flaked coconut, toasted

Toffee:

  • 1 1/2 cups butter or margarine
  • 1 1/2 cups sugar
  • 3 tablespoons water
  • 4 1/2 teaspoons light corn syrup

Chocolate Topping:

  • 1 1/2 cups (9 ounces) chocolate pieces
  • 1 tablespoon shortening
  1. Heat oven to 200° F.
  2. In large bowl, combine popcorn, peanuts and toasted coconut. Cover bottom of buttered 15 1/2-by-10 1/2-by-1-inch jelly roll pan with half of the popcorn mixture. Keep filled pan and remaining popcorn mixture warm in oven.
  3. To make toffee: In heavy 2-quart saucepan, melt butter over low heat. Add sugar and blend well.
    Continue to cook over low heat, stirring constantly, until mixture reaches full boil. Add water and corn syrup; mix well.
  4. Wash down sides of pan with pastry brush dipped in water to remove any sugar granules.
  5. Cook and stir over low heat until mixture reaches soft-crack stage on candy thermometer (280° F). Immediately pour mixture over warm popcorn in jelly-roll pan, making certain all popcorn is covered. Quickly spread and press remaining popcorn mixture into hot toffee. Set aside to cool.
    For topping, melt chocolate and shortening over low heat. Spread over popcorn mixture, making certain any loose pieces are held in place.
  6. Cool. Cut into bars. If bars will not be served immediately, wrap in plastic wrap for storage.

Island Fruit Salad

Servings: 2

  • 2 tablespoons water
  • 2 tablespoons coconut sugar
  • 1/2 lime (1 tablespoon), juiced
  • 1 1/2 teaspoons rum extract
  • 2 kiwis, peeled and diced
  • 1 orange, sectioned and halved
  • 2 cups seedless watermelon, chopped
  • 2 teaspoons flaked, sweetened coconut
  1. In small bowl, combine water and coconut sugar; microwave 20 seconds. Stir to completely dissolve sugar. Let cool. Once cool, add lime juice and rum extract.
  2. In medium bowl, add kiwi, orange and watermelon. Pour rum juice over top and thoroughly toss. Let sit 30 minutes to allow flavors to blend.
  3. Divide fruit salad into two bowls and sprinkle with coconut.

Watermelon Protein Bites

  • 1 cup pitted dates, soaked
  • purified water
  • 1 1/2 cups sprouted watermelon seeds, divided, plus additional for garnish
  • 1 tablespoon coconut butter
  • 1 cup fresh watermelon, chopped
  • 1/8-1/4 cup roughly chopped beets (optional)
  1. Chop dates in half.
  2. Place dates in bowl of purified water and soak 1-2 hours.
  3. Remove dates from water bowl and place them into food processor.
  4. Pulse a few times then add 1 cup watermelon seeds, coconut butter and watermelon.
  5. Add chopped beets, if using.
  6. Blend until well combined, scraping sides of food processor as you go.
  7. Add remaining watermelon seeds and pulse, leaving some seeds chunky.
  8. For smoother texture, continue to blend.
  9. Remove mixture from food processor, place in small bowl and cover, allowing to cool in refrigerator 30 minutes.
  10. Remove mixture from fridge. With fingertips slightly wet, roll mixture into balls and place on a plate.
  11. Once done rolling, add watermelon seeds to top.
  12. Place watermelon bites in freezer 1-2 hours, or until frozen.

Steel-Cut Oats with Watermelon

Servings: 2

  • 1 cup 1 percent milk, plus additional (optional)
  • 1 cup water
  • 1/2 cup steel-cut oats
  • 3/4 cup diced seedless watermelon
  • 2 tablespoons dried tart cherries or cranberries
  • 2 tablespoons chopped pecans
  • 2 tablespoons maple syrup
  1. In medium saucepan over high heat, bring 1 cup milk and water to gentle boil. Pour in oats. Stir; return to gentle boil then reduce heat to simmer, stirring occasionally, 20-30 minutes.
  2. While oats are cooking, in small bowl, combine watermelon, dried fruit, nuts and maple syrup.
  3. Portion out oats and top with watermelon mixture. Add additional milk, if desired.

  • 8 cups popped popcorn
  • 3 tablespoons melted butter
  • 2 tablespoons granulated sugar

  • 1 cup raisins
  • 1 cup walnut halves
  1. In bowl, toss popcorn with melted butter.
  2. Combine sugar with cinnamon; sprinkle over popcorn. Toss with granola, raisins and walnuts until combined.

Yield: 7 cups

  • 6 cups popped popcorn
  • 1 tablespoon butter, melted
  • 2 teaspoons sugar
  • 1/2 teaspoon cinnamon
  • 2 cups dried apple chips
  1. Heat oven to 300° F.
  2. Line 9-by-13-inch baking pan with foil; butter foil. Spread popcorn in pan and drizzle with melted butter; toss popcorn. Sprinkle popcorn with sugar and cinnamon, and toss again.
  3. Bake 7 minutes.
  4. Sprinkle apple chips over popcorn and heat an additional 3 minutes.
  5. Serve warm, or cool to room temperature. Store in airtight container.

Yield: 9 cups

  • 5 cups popped popcorn
  • 3 cups whole-grain oat cereal
  • 1/3 cup raisins
  • 1/3 cup peanuts (or other nuts)
  • 1/3 cup sunflower seeds
  • 1/4 cup (1/2 stick) butter or margarine
  • 6 tablespoons brown sugar
  • 2 tablespoons light corn syrup
  1. In large, microwavable bowl, stir together popcorn, cereal, raisins, nuts and seeds; set aside.
  2. In small saucepan, combine butter, brown sugar and corn syrup. Heat until boiling; cook 3 minutes, stirring occasionally.
  3. Pour over popcorn mixture, stirring to coat evenly. Microwave 3-4 minutes, stirring and scraping bowl after each minute.
  4. Spread onto greased cookie sheet; cool.
  5. Break into pieces and store in airtight container.

  • Nonstick cooking spray
  • 1/2 cup honey
  • 2/3 cup peanut butter
  • 1 cup granola cereal
  • 1 cup roasted and salted peanuts
  • 3 cups popped popcorn
  1. Line 8- or 9-inch square baking pan with foil. Spray foil lightly with cooking spray; set aside.
  2. In large saucepan, heat honey until boiling. Stir in peanut butter until well blended.
  3. Remove pan from heat and stir in granola, peanuts and popcorn until coated. Press mixture evenly into prepared pan.
  4. Refrigerate until cool; cut into bars to serve.

Yield: 2 1/2 quarts

  • 2 1/2 quarts popped popcorn
  • 1 cup plain yogurt
  • 1 cup brown sugar
  • 1/3 cup light corn syrup
  1. In large bowl, keep popped popcorn warm.
  2. In 2 1/2-quart saucepan, combine yogurt, brown sugar and corn syrup. Cook and stir over medium heat to hard ball stage (250° F on candy thermometer).
  3. Pour over popped popcorn, stirring to coat.

PB&J Banana Burritos

Ingredients
  • 2 Mission Small / Fajita Flour Tortillas
  • 4 tablespoons Jif Creamy Peanut Butter
  • 2 tablespoons Smucker's Strawberry Jam, Jelly, or Preserves
  • 2 bananas, peeled
Preparation
  1. Place tortillas on a paper towel and microwave for 10 seconds.
  2. Spread 2 tablespoons peanut butter on each tortilla. Add 1 tablespoon jelly to each tortilla.
  3. Place the banana near the edge of the tortilla and fold up the ends of the tortilla. Roll-up and enjoy!
