Ingredients
Dressing:
1/2fresh limejuice only
1/4cuptoasted sesame seed oil
3tablespoonshoney
2tablespoonstahini
3tablespoonscreamy peanut butter
1teaspoonchili oil
1garlic clovegrated
1teaspoonfresh gingergrated
kosher saltto taste
1tablespoonhot waterplus additional for thinner consistency (optional)
Salad:
2cupsbroccoli slaw
1cupshelled edamamecooked
1 1/2cupschopped raw broccoli
1/2cupEnglish cucumberquartered and chopped
1/4cupfresh mintchopped
1/4cupfresh cilantrochopped
1/4cupsalted peanutsroughly chopped
toasted sesame seedsfor garnish (optional)
Instructions
To make dressing:
In bowl, whisk lime juice, toasted sesame seed oil, honey, tahini, peanut butter, chili oil, garlic, ginger and salt, to taste. Add hot water, adding additional, if necessary, until dressing reaches desired consistency. Set aside.
To make salad:
In large bowl, combine broccoli slaw, edamame, broccoli, cucumber, mint, cilantro and peanuts. Toss with dressing to combine and garnish with toasted sesame seeds, if desired.
