I have to be honest. I’ve never been a fan of Valentine’s Day. It’s not that I don’t like the holiday or the meaning behind it, I’ve just never been interested in celebrating it. My husband and I don’t swap gifts or go to a fancy dinner. In our household, it’s honestly just another day. Until this year!

Hear me when I say I’m not going all in. We’re starting small on our Valentine’s Day celebration, but if we’re going to start somewhere it must be with food! This year I’m making Red Velvet Heart Pancakes!

What have you been up to during these chilly winter months? I have been getting my new house up to par and, of course, trying new things in the kitchen.

I’m really into mixing different flavors, especially when it comes to treats. Today, I’m sharing this new recipe for Creamy Raspberry Mocha Parfait.

It’s light, fluffy, flavorful and combines a few of my favorite things: coffee, whipped topping and raspberries!

These Zucchini Boats are delicious! I have made a variety of different types of boats, but these have to be my FAVE. I mean, look at these little tiny pepperonis and perfectly melted CHEESE. Not to mention, these little boats mimic pizza with better ingredients and are SO easy to throw together.
