Let’s talk about summertime’s overlooked vegetable for a minute. Summer is full of fruity goodness. Pineapple, berries of all sorts, peaches, lemons and the good old watermelon. It’s full of veggie goodness, too, from squashes of all kinds to carrots and green beans. As you can see, it is full of all sorts of fresh, earthy goodness but there is one veggie that gets overlooked this time of year. It’s that green head of broccoli.
Broccoli is usually covered in warm cheese or dipped in dressing, but I have other plans for this lovely, overlooked veggie: Let’s turn it into a yummy salad. This Broccoli Salad recipe is super easy, and your family and friends will be asking for the recipe after one bite. The dressing on this fantastic salad is incredibly delicious and almost addicting, but the best part about this dressing is it can be made with simple ingredients you might already have in your pantry.
This exceptional salad can easily be eaten as a standalone dish for lunch or the most fabulous side at the table. Now that’s what I call a super summertime veggie to remember.

Broccoli Salad
Ingredients
- 2 medium heads broccoli
- 2 apples
- lemon juice
- 1 carrot
- 1 cup blueberries
- 1 cup dried cranberries
- 1 cup sunflower seeds
- 1 cup pecans
- 1 package 2 1/2 ounces real bacon pieces
Dressing:
- 1 cup mayonnaise
- 1/3 cup milk
- 1/3 cup apple cider vinegar
- 2/3 cup sugar
- 2 tablespoons poppy seeds
Instructions
- Coarsely chop broccoli and place in large bowl. Coarsely chop apples and brush with lemon juice to prevent browning; add to bowl. Shred carrot and add to bowl with blueberries, cranberries, sunflower seeds, pecans and bacon.
- To make dressing: Mix mayonnaise, milk, apple cider vinegar, sugar and poppy seeds. Pour over broccoli salad and mix well.
