These light and tasty Cucumber Sandwiches are exactly what’s needed for the perfect summertime lunch. They can be made in advance and kept in the fridge to be used as needed. So whether you are grabbing on the go or just need that afternoon pick-me-up, this easy yet flavorful sandwich is your go-to solution. Now that’s what I call a savvy delectable lunch!

Cucumber Sandwiches
Ingredients
- Garlic toast
- 4 ounces cream cheese, softened
- 1/2 cup mayo
- 2 teaspoons dried dill
- 2 teaspoons thyme
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 2 cucumbers
- salt to taste
- pepper to taste
Instructions
- Cut crust off bread and set aside.
- In bowl, mix softened cream cheese, mayo, dill, thyme, onion powder and garlic powder. Peel cucumbers then coarsely chop and add to cream cheese mixture. Add salt and pepper, to taste.
- Spread mixture over bread and cut into triangles.
Notes
Tip: Recipe can be doubled, if needed.
