Crunchy Sweet Potato Casserole
Ingredients
- 5-6 sweet potatoes mashed
- 1/2 cup butter melted
- 1/4 cup sugar
- 1/4 cup packed brown sugar
- 2 eggs lightly beaten
- 1/2 cup milk
- 1 TSP ground cinnamon
- 1/2 TSP ground nutmeg
TOPPING:
- 1 cup crushed cornflakes
- 1/2 cup chopped walnuts
- 1/4 cup packed brown sugar
- 1/4 cup butter cubed
Instructions
- Preheat oven to 375° F
- In a large bowl, combine mashed sweet potatoes, melted butter, sugar, brown sugar, beaten eggs, milk, cinnamon and nutmeg.
- Spoon into a greased 1-1/2-qt. baking dish. Bake, uncovered, 20 minutes.
- In a small bowl, combine crushed cornflakes, walnuts, brown sugar and cubed butter.
- Sprinkle over potato mixture.
- Bake again 5-10 minutes or until topping is lightly browned.
