Feed a Crowd with a Comforting Pasta Dish

Let’s talk savvy pasta for a minute. For me, pasta is one of those ooey, gooey comfort foods. It’s warm, great with buttered bread and you just feel cozy eating it.

Many people think of the four most popular dishes: macaroni and cheese, spaghetti, lasagna and alfredo, which are all great go-to’s on any day, rain or shine. For the most part, they are all quick and easy, family-pleasing meals, but what if you had a recipe that did more?

Consider my recipe for a family-friendly, crowd-pleasing Family Style Chicken Piccata. Its yummy goodness will have family and friends asking for more. It can even be jazzed up with candles and chocolate for special occasions. It’s super easy to make and, better yet, you can use leftover fried or rotisserie chicken. This is one of those dishes that will put a smile on everyone’s face, including your own. You can’t get more savvy than that!

Family Style Chicken Piccata

Consider my recipe for a family-friendly, crowd-pleasing Family Style Chicken Piccata. Its yummy goodness will have family and friends asking for more. It can even be jazzed up with candles and chocolate for special occasions.

Ingredients
  

  • 2-3 cup chicken
  • 2 cup chicken broth
  • 1 lemon juice only
  • 4 tbsp flour
  • 2 tsp pepper
  • 1 tsbp garlic powder
  • 1 tsbp onion powder
  • 1/2 lb spaghetti noodles
  • 3/4 cup parmesan cheese grated
  • 1/2 cup heavy cream
  • 1 tbsp capers
  • 1 tbsp dried rosemary (optional)
  • bread for serving

Instructions
 

  • In large skillet, brown chicken. After fully cooked, remove from skillet and shred
  • In same skillet over medium heat, whisk chicken broth, lemon juice, flour, pepper, garlic powder and onion powder until thickened
  • Cook noodles according to package instructions
  • Add shredded chicken to skillet with Parmesan cheese, heavy cream and capers. Stir until creamy. Serve over noodles or add noodles to pan and mix well. Sprinkle dried rosemary on top, if desired. Serve with favorite bread

Notes

Note: If using leftover chicken, skip browning.
