I’ve done all the thinking with this one so you don’t have to. Plus, to top it all off, this recipe can be easily adapted to your family’s likes. If your loved ones want broccoli or cauliflower instead of spinach, go for it. However you decide to make it will be great! Remember, you have your veggie and your protein all in one pan topped with lots of cheese; what could be better than that? Now that’s what I call a savvy easy, cheesy weeknight meal!

Cheesy Spinach Chicken Bake
Ingredients
- 2 cups chopped rotisserie chicken
- 10 ounces frozen spinach thawed and drained
- 15 ounces ricotta cheese
- 2 cups mozzarella cheese
- 1 cup Parmesan cheese
- 1 tablespoon Italian seasoning
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon lemon thyme
Instructions
- Heat oven to 375 F.
- Cut rotisserie chicken and spinach into bite-sized pieces. In baking dish, mix chicken and spinach with ricotta cheese.
- Add mozzarella, Parmesan, Italian seasoning, garlic powder, onion powder and lemon thyme. Mix well then bake 30 minutes.
