Let’s talk quick and easy summertime meals for a minute. Summer is here and so are all the activities summertime brings. One day you’re busy going here and there, the next it’s hot and lazy. Both days can make thinking about “what’s for supper” hard. Good thing I have a recipe to make what could be hard super easy.
This Shrimp Spaghetti recipe will soon be your go-to meal. It’s quick and simple, and by using shrimp, you take supper up a level. It’s also great for that unexpected company at suppertime that can happen this time of year. I promise they won’t feel unexpected for long because they are going to love every bite. Now that’s what I call a savvy simple summertime solution!

Shrimp Spaghetti
Ingredients
- 1 pound spaghetti noodles
- 2 tablespoons butter
- 1/4 cup avocado oil
- 1 package raw shrimp 12 ounces
- 2 tablespoons garlic powder divided
- 1 teaspoon smoked paprika
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 1 teaspoon onion powder
- 1 cup frozen or fresh spinach
- bread for serving
Instructions
- Cook spaghetti noodles according to package instructions.
- In skillet over medium heat, add butter, avocado oil and shrimp. Mix in 1 tablespoon garlic powder and paprika. Remove shrimp after they begin to turn pink; set aside.
- Add chicken broth, Parmesan, heavy cream, remaining garlic powder, onion powder and spinach to skillet and mix well. Add shrimp back to skillet to finish cooking. Mix in noodles and serve with bread.
