Let’s talk savvy uses for canned corn for a minute. You know canned anything in the summer just doesn’t sound right. Summer is the time when all things fresh is the thing to do. However, there are times, even in the summer, when convenience is the name of the game. When that happens, remember I have a recipe!
This Queso Cheese Corn Salad is easy to throw together for that impromptu cookout. It’s versatile enough to make everybody happy. You can make it hot with peppers or leave them out if kids are invited. This is the recipe that just might save the day! Now that’s what I call a corn-tastic savvy side!

Queso Cheese Corn Salad
Ingredients
- 2 cans whole corn drained
- 1 cup chopped bell pepper
- 1/4 cup chopped red onion optional
- 1 hot pepper optional
- 1 cup shredded queso cheese
- freshly chopped cilantro for garnish
Dressing:
- 2 limes juice only
- 1/4 cup mayo
- 1 pinch salt
- 1 tablespoon sugar
Instructions
- To make dressing: In bowl, mix lime juice, mayo, salt and sugar.
- In separate large bowl, mix corn; bell pepper; onion, if desired; hot pepper, if desired; and queso cheese.
- Pour dressing over corn mixture and mix well. Top with cilantro.
