Let’s talk savvy summertime treats for a minute. Summer desserts mean different things to different people. Some need quick on-the-go treats while others need let’s-take-it-slow-and-enjoy-the-moment treats. And I just happen to have a recipe that will fit the bill for both of those summertime needs.
These Easy Lemon Blueberry Bars can be eaten slowly when they’re warm from the oven while enjoying a lazy summer day. But they can also be made in advance and eaten on the go while enjoying all the activities summer can bring. Their tarty goodness is enhanced by the sweetness of the white chocolate chips making them a must-try this summer. Now that’s what I call a savvy tasty summertime treat!

Easy Lemon Blueberry Bars
Ingredients
- 1 stick butter melted
- 1 box lemon cake mix
- 2 eggs
- 1/3 cup fresh blueberries
- 2/3 cup white chocolate chips divided
- 1/3 cup chopped pecans
Instructions
- Heat oven to 350 F.
- In bowl, combine butter, cake mix, eggs, blueberries, 1/3 cup white chocolate chips and pecans.
- Butter 7-by-11-inch pan and spread mixture evenly into pan. Bake 30-35 minutes.
- Let cool then melt remaining white chocolate chips and drizzle over bars.
