Let’s talk about the flavors of summer and my love for spaghetti for a minute. When I think about summer, my mind goes straight to the grill. But grillin’ isn’t always my vibe. Don’t get me wrong, I love the grill; it can make cooking in the summer so much easier but I’m a carb girl. I cannot live on meat alone; I need some pasta in my life. But a heavy marinara sauce meal in July isn’t my thing either. Good thing I love lemon and, when mixed with chicken and spaghetti noodles, well, that’s a meal I can get into.

This Lemon Chicken Spaghetti is full of summertime flavor. It might look like a hard meal to put together but I promise this will only take 20-30 minutes and you will have it table ready. I can also promise your family will be requesting this one fall, winter and springtime, too. Now that’s what I call a savvy winner, winner chicken dinner!

Lemon Chicken Spaghetti

Servings 4

Ingredients
  

  • 1 pound spaghetti noodles
  • 2 chicken breasts
  • 1/2 cup flour
  • 2 tablespoons lemon pepper
  • 1/2 cup avocado oil
  • 3 tablespoons butter
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1 tablespoon onion powder
  • salt to taste
  • pepper to taste
  • 1 teaspoon lemon pepper optional

Instructions
 

  • Cook noodles according to package instructions. Cut chicken into bite-sized pieces.
  • In bowl, mix flour and lemon pepper. Mix chicken in flour until evenly coated.
  • In skillet over medium heat, add oil and butter. Add chicken and fry until golden brown. Remove from skillet and set aside.
  • Empty skillet but don’t wipe clean. Add chicken broth and, using spoon, stir bits from chicken over medium heat. Add heavy cream, Parmesan cheese and onion powder. Season with salt and pepper, to taste. Add lemon powder, if desired. Stir until well combined then add chicken.
  • Serve over cooked noodles or mix noodles into skillet.
