Let’s talk savvy turkey day leftovers for a minute. It’s here, the time of year we love and dread all at the same time. We love getting together with family and friends to eat delicious food and catch up on everybody’s lives. But after the dishes are all done and the leftover food is put away in the fridge, what then? Because we all know nobody wants leftovers on Friday after gorging themselves on Thursday.

Have I got the recipe for you. This one-pan Leftover Turkey Casserole brings everybody back to the table. It’s leftovers that won’t taste like leftovers at all and the best part is, there is only one pan to wash! Now that’s what I call a savvy leftover supper!

Easy-Peasy Leftover Casserole

Leftover Turkey Casserole

Servings 8

Ingredients
  

  • 3 pounds cubed red potatoes
  • 2 cups chopped leftover turkey
  • 2 cups chopped smoked sausage or leftover ham
  • 27 ounces green beans or leftover green bean casserole
  • 1/2 cup chicken broth optional
  • 10 ounces cream of mushroom soup optional
  • 1 tablespoon garlic powder optional
  • 6 ounces French fried onions optional
  • salt to taste
  • pepper to taste

Instructions
 

  • Heat oven to 400 F.
  • In roasting pan, combine potatoes, turkey, sausage or ham and green beans or green bean casserole. If using leftover casserole, add chicken broth and mix well.
  • If using canned green beans, in bowl, mix broth, cream of mushroom soup, garlic powder and onions. Pour over turkey mixture.
  • Add salt and pepper, to taste. Bake 30 minutes then stir and bake 15 minutes.
