A Perfectly Superb Potato Salad

Let’s talk fun in the sun summer sides for a minute. I don’t know about y’all but summer to me means easy eats with family and friends. Schedules are in the rearview mirror not to be seen again until fall and meals can be taken outdoors to enjoy the fresh air and sunshine. Grills are in full use and easy sides are a must.

This month, I will be focusing on easy sides that can be taken to gatherings or easily made and eaten at home. The first one is a quick and easy potato salad. This creamy delicacy will complement any entrée and will be a guaranteed hit at any potluck gathering. Now that’s what I call a perfectly superb summer side.

Potato Salad

Servings 4

Ingredients
  

  • 3 pounds potatoes
  • 4 boiled eggs coarsely chopped
  • 2 dill pickles
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 package real bacon pieces 2 1/2 ounces
  • 2 cups mayonnaise
  • 2 tablespoons mustard
  • salt to taste
  • pepper to taste
  • smoked paprika for garnish

Instructions
 

  • Coarsely chop potatoes. In Dutch oven, boil until fork tender. Drain then add coarsely chopped eggs and pickles.
  • Add garlic powder, onion powder, bacon pieces, mayonnaise and mustard. Season with salt and pepper, to taste. Mix well.
  • Transfer to large bowl and refrigerate 1-2 hours. Garnish with smoked paprika.
